I have to applaud you. You are one of the few who tries to get EVERYTHING out of the containers when combining. It is amazing how much food people leave behind and therefore WASTE! Thank you!

This is the sauce they make at El Pollo Loco but it doesn't have the same pepper/minty taste of the Aji I've had at a couple of Peruvian family restaurants I visit quite often. They tell me that they barely use any jalapenos (maybe one total) and that they utilize huacatay.

I know is old but perhaps you are still interested in an answer, the thing is that there is no Japalapeños un Peru, we have a different variety of ajies (called chillies in the north). They have a different taste and they are very aromatic. For that green sauce, "pollerias" like el "poll loco" use "Aji amarillo" and a green herb related to mint called "huacatay" which grows in the Peruvian Andes. Jalapeños or chillies are only found in central and north America.

Is the mayo really neccessary? Couldn't you just increase oil?

*Next time please soften lime (by rolling on the counter with your hand) before cutting and squeezing; I guarantee it will be much more easier to squeeze the juice out.*

You can also use a fork. Stab it in the middle and twist fork while squeezing.

If you want to have juice from your green lemon hit it before you cut it in two, the juice will be released

ArepasDelGringo take that mayonnaise and stick it in the garbage along with this recipe. It has no place in South American cuisine.

I would rather not. Thanks. This recipe along with the hundreds of others that use mayonnaise in Aji are apparently quite out of your comfort zone. I would recommend not letting it get you so upset and move along to a recipe without it.

Only a gringo puts that processed crap in their aji. Aji is supposed to be fresh. It's flavour and texture comes from natural ingredients. If you want creamy go for avocado. If you want to use mayo, go back to flipping burgers.

Actually no, not just a gringo puts mayonnaise in their Aji. I have various condiment recipes and videos, this one happens to use mayonnaise. Like I said, there are many ways to make Aji. Just because it is not yours does not mean it is wrong.
