Feng!!! Tomorrow is Three Kings Day in Puerto Rico where all the children receive gifts and the adults literally enjoy the food. This year I will change the menu to pizza! You always present your recipes at the best times for me! The truth is that I like how simple you make the explanation of the recipes and how not complicated. Pistacchio, Mortadella and Burrata is a match made in heaven! However I like to use the pesto also as a base (making it creamier with milk: 2 parts pistacchio, 2 parts milk, 1 part EVO oil), imo this creates some deep and rich roasty flavours and makes the pizza incredibly creamy...in fact, it's my wife's absolute favourite!

sounds good, I make with reduced cream and mozzarella as a base and then mortadella, pistachio pesto such as the one in the video and some fresh basil

You can make 'pestos' with most any greens/nuts/cheese. I like arugula/walnut pesto...I've used goat cheese in place of parm. I also like a spoonful of sunbutter if you are making a nut-free pesto. I also like adding some chili flakes for kick, but definitely try varying the ingredients. I think a traditional pesto with good olive oil, parmigiano reggiano, and pine nuts is great, ,but also expensive and not an every day recipe, especially in the off-season.

Any nut alternatives for the pesto or would it still be ok to just leave them out? Nut allergy unfortunately.

You can omit the nuts or substitute pumpkin seeds or sunflower seeds instead :)
