Cooking Time: 20-30 Minutes
Serves: 3-4 People
Ingredients:
Pasta - पास्ता (200 grams)
Fresh Basil Leaves - ताज़ी तुलसी की पत्तियाँ (1/2 cup)
Pine Nuts - पाइन नट्स (1/4 cup) Or Cashews - काजू (1/4 cup)
Parmesan Cheese - पार्मेजान चीज़ (1/2 cup, grated)
Olive Oil - जैतून का तेल (1/4 cup)
Non-Alcoholic Wine - बिना अल्कोहल वाली वाइन (1/4 cup)
Lemon Juice - नींबू का रस (1 tablespoon)
Ginger - अदरक (1 inch, grated)
Green Chilli - हरी मिर्च (2-3 pieces, chopped)
Cherry Tomatoes - चेरी टमाटर (1/2 cup, halved)
Chilli Flakes - मिर्च के फ्लेक्स (1 teaspoon, या स्वादानुसार)
Salt - नमक (स्वादानुसार)
Fresh Coriander - ताज़ा धनिया
Method:
Prepare the Pesto:
In a chopper, add olive oil, cashews or pine nuts, ginger, green chili, and a pinch of salt.
Grind it together to emulsify the oil nicely.
Next, add the fresh basil leaves, fresh coriander,, parmesan cheese, and more olive oil.
Grind it again until a semi-coarse paste is formed. Make sure to scrape the sides of the chopper as needed.
Your pesto is now ready.
Boil the Pasta:
To perfectly boil the pasta, bring water to a roaring boil in a stock pot.
Add salt and the pasta of your choice, then let it boil for about 8 minutes or until cooked to your liking.
Once boiled, strain the pasta using a large spider or strainer, making sure to reserve some of the pasta water.
Combine the Pasta and Pesto:
In a bowl, add the boiled pasta as required, some parmesan cheese, and the prepared pesto according to your taste preference. Mix well.
Add a couple of tablespoons of the reserved hot pasta water to bring the pasta to the right consistency. This will help the sauce coat the pasta evenly.
Once mixed, taste and adjust the seasoning if required.
Serve:
Your quick and easy No Onion No Garlic Pesto Pasta is ready. Serve it hot, garnished with fresh coriander or additional parmesan cheese if desired. Enjoy!
