The weird weapon that takes people's head is an iconic wuxia fantasy weapon called “血滴子” or "blood dripper". Throw it at your enemy, it will automatically catch their head and snatch it clean off their neck. The inner part is like iron maiden but not with spikes and nails, but with blades. Edit: wuxia novels also have that "conventional weapon" and "eccentric weapon" things. Conventional weapon is usually found in military training, more specifically, sword (single edged and double edged) and spear. In this case the blood dripper is the eccentric among eccentric.

FYI, the flail like weapon that the boss uses at 6:38 is called 血滴子 or Flying Guillotine, a legendary Chinese ranged weapon used during the reign of the Yongzheng Emperor in the Qing Dynasty. The weapon resembled a disc or flattened dome with a bladed rim and a chain or rope attached to the weapon's top, allowing it to be wielded as a bladed flail or thrown like a flying buzz saw. According to legend, the weapon's deadliest feature, and the source of it's English name, was its ability to decapitate a victim by being thrown on top of their head. Once landing, a pressure switch in the disk's underside would release the rim to fall over the head and encase it in a silken trap. A tug on the chain would then trigger concealed blades along the interior of the rim to swing out and cut through the neck. There is also evidence that the weapon may have been soaked in deadly poison before use, such that it can kill a person immediately when blood is drawn (literally "at the sight of a drip of blood"), which gives rise to its Chinese name 血滴子.

My one critique would be the player character attacks with a superfast flurry of strikes making it difficult to discern at what point attacks will not stun lock the target. In Sekiro you had simple 3, 4, 5 hit combos that could be easily interrupted and each successful strike on the enemy would cause a degree of stun lock or reaction otherwise your attack would be countered with a block. In this game you seem to just wail on the target until it decides to attack you again. That crucial mid step of showing consistent reactions to your moves so you can anticipate the next attack is not present. It's like a traffic light missing an amber light, it just goes from Red straight to Green.
