Hotcake
Hotcakes are Filipino versions of pancakes, eaten mostly as a snack rather than during breakfast. They’re thin, spongy, and have that signature egg yellow colour. This is often served with margarine or butter and sprinkle of granulated sugar on top.
I tried to make this hotcake before but I never got it right. It always turns out like a normal pancake. This is one of my favourites. I remember when I was back home and as a little kid, each time we went to the market I always begged my mum to buy hotcakes.
For this recipe you will need:
240 g plain flour
50 g granulated sugar
2 tsp baking powder
¼ tsp salt
500 ml water
40 g melted butter
1 tsp vanilla extract
Method:
1. In a large bowl, mix the flour, sugar, baking powder and salt. Mix. Then add the butter, vanilla extract and water.
2. Whisk until nice and smooth. The consistency should be smooth and thin.
3. Preheat the pan (I used an iron pan for this) and turn to medium heat. Grease with a little butter and scoop the batter (⅓ cup). Let it cook for a minute or when those little bubbles start to form and pop on top then you can flip. Cook the other side for another 30 seconds.
4. Serve with margarine butter and sprinkle it with granulated sugar.
