(Soft-Shelled Snails Stew):
Boil GINGA. Sauté aromatics. Add snails and stir-fry. Close lid. Add salt & pepper to taste.
🦗 KHACHIW with CHAJAP
(Fish Soup with River Crickets):
Boil KHACHIW (Fish) and CHAJAP (Cricket). Sauté aromatics. Mix them together.

2. Mayoyao Japanese Eel Hatchery
🇯🇵 PIKAW
(Japanese Eel):
The Japanese Weather Loach (PIKAW), was introduced by the Japanese in the Philippines during WW II. In Cordillera, it was historically abundant in rice paddies, however due to commercialization the reproduction of the PIKAW depleted.

INTERVIEWEES: Fidel (Eel Hatcher)
🪱 PIKAW
(Japanese Eel Stew):
Sauté aromatics with some Liquid Seasoning. Stir-fry with PIKAW. Add coconut milk and water. let simmer for about 10-15 mins. Add String Beans, Fish Paste, Onion, Green Chili.
🔥 DEEP FRIED PIKAW
Deep-fry PIKAW in Oil in 10-15 mins, or until golden brown and crispy enough. Salt and Pepper. Serve with sauce made from Vinegar and Burned Garlic.

4. Bongan Rice Terrace
INTERVIEWEES: Fidel (Snail Forager, Man in White Tee) | Eduardo (Main Chef at Cow's Location) | Detchie (Co-Host Woman) | Chui (Cameo Actor)
🏏 LATEG TI BAKA / SOUP NUMBER 5
(Beef Bats and Balls):
Boil cow penis and balls for 30 mins, then drain. Sauté aromatics. Add water. Add penis and balls back to the pot, then more water. Salt to taste. Close lid, and boil for another 45 mins - 1 hour.
🍲 PAPAITAN
(Cow Bitter Soup):
Clean organs thoroughly then boil. Remove from pot and chop into smaller pieces. Sieve juice from stomach into bucket. Sauteé aromatics. Remove some Ginger and use for the penis soup. Add the organs back to soup. Add a little bile and sieved stomach juice to the pot. Add salt to taste and green chili.
🐮 SUNGO
(Cow Nose Soup):
Remove head and preserve its entirety. Boil water & add salt.
Put head in & boil for 2 hours.

What I appreciate about this is not just the food and scenery but the culture:collectivism in social responsibility, making out most for and from the environment ( agriculture system is superb) and the pride of our Indigenous peoples of their way of life

While in the Navy, I spent 3 months in Luzon and flew my helicopter over the terrace rice paddies. Unbelievably beautiful. Filipinos have an extremely hospitable culture. I ate a lot of food that doesn’t exist elsewhere and enjoyed the experience.

Why are you surprised? The Philippines was a colony of the United States from 1899 to 1945.

@@dr.woozie7500 Certainly that had an impact, but the younger generation typically speaks English better than older people. In other words, Filipinos born well after the Philippines gained their independence are better at English. This is because the Philippines government recognized that English is the international language of business, so they require students in public schools to take English. If your suggestion that they speak English because they were a US colony 80 years ago were accurate, young people wouldn't be better at English than their parents, but they quite commonly are. I'm married to a Filipina and lived there for 9 years.

​@@roberttrombatore3668typically, yes! For further information in the CAR region area the older generation are as good as the younger generation. In general the older use simple but grammatically correct English while the younger generation do have better pronunciation. CAR oldies have a lot of U.S influence unlike other Philippine areas with a mix of Spanish and U.S as the Car region was able to somewhat fend off Spanish colonizers. If you go there a lot of older people would have been part of or is a part of the Anglican church instead of Catholic.

For those of you who aren't from the North. Cordillera Autonomous region (CAR) especially the native/locals are notorious for their english speaking ability with good pronunciation. Probably better than the masses of Manila.

The papaitan shown on this video is the most 'hardcore' version of papaitan that I've seen and I don't think anyone can top that. I've been here, in mayoyao, I ate some local dishes, a sautéed water crest flower, boiled fresh pork meat. You can taste the "umami" of the fresh pork. No seasoning, just boiled. Then a chicken tinola, but the chicken is really big, like the chicken foot is the same size of a child's arm.

I like how respectful you are whenever you are introduce to an unknown dish that you’ve probably never encountered before. That alone speaks volumes. It means you are not only about the food but also about the culture. The thing is it is not really a shit. The papaitan is from the largest portion of the compound stomach (Rumen). The juice is collected by squeezing the juice from the fermented forage materials from the rumen. Papait on the other hand would come from the bile.

Dude, a word of advise .... I 100% agree with u but this Sonny guy seems to have certain "subscribers" who do not realise that one can make a comment. I'm an igorot(IP of the Philippines), and quite honestly, I don't like some of the dishes here although they taste quite good. Probably because I had a lot of exposure to other cultures. I had participated and done some dishes myself which includes: Pinapaitan(Intestene juice), Pinikpikan(A way of cooking chicken), and Itag(Dried meat, I abhor it.) They aren't bad, but for some reason, I don't like it. Just a personal preferrence. If you ever visit Philippines, you can try those, who knows? You might like it.😘

papaitan’s version varies from mild to extreme. From manila going deep in the northern part of the country. For me the best version is the ilocano papaitan way of cooking which they use goat innards.

@@cozy6308 dont be offended by us spoiled westerners. its how we grew up and the food we got to eat. alot of people in the west never even eat organs, just the nice muscle and fat tissues of animals. so hearing of bile and digestive juice as flavor seems revolting, and i bet sadly most would not enjoy this. kind of like cheese, where its an acquired taste. i would wish we had a more open mind, but food taste is learned and we lost important parts of it here

That part of the Philippines where Sonny went to was heavily influenced by Americans when the Philippines was under their rule. This is also why it's easier for them to speak English, paired with their local/native language, as opposed to speaking Tagalog.

In our town, we use goat meat for Papaitan. It is bile that was mixed to the soup to give bitter taste. This(bile) strengthens our immunity to sickness and serves as stamina builder. It is backed by science if you wanna check. For foreigners, remember even the most expensive & delicious coffee came from shit of civet.

They do the same sorta dish in Laos. Including other creatures like deer. They also do male cows organ soup. As well for fertility a female cow soup. Very delicious food! I'm proud of you for eating the crickets and loaches. Korea is big on those as well. I even had them on a flight.. 👍👍

For the hmong we have a similar dish that use the filter poop too. I'm not fan of it but it is a popular dish around the older folks. We also have the bile soup dish with the organs.

We always cook 'pinapaitan' here in wisconsin(u.s.a) during our day off, its our 'pulutan'😅... Its alternate weekend we cook pinapaitan and dinakdakan...sometimes we make kalyente the skin of the cow as our pulutan too...

My grandfather used to make the goat version. He used a few tablespoons of bile for the entire goat. I didn't appreciate it when I was a child, but as I got older, I looked forward to it when we had a celebration. Now I have my own children and no one to pass down this special dish. Thank you for this video, it brought back a fond memory.

Hmong have it too? I see. I've been looking this up for a while now because I find it grossly interesting. The Ilocano tribe of the Philippines uses this juice, which is called bile (it's not poop, but it's part of poop). The entirety of Laos apparently uses it while only the Northern Thai uses it in their food. The Chinese (Yunnan only) uses it for food, but China as a whole uses it in medicine, and Japan also uses it in medicine. Edit: A Vietnamese guy claimed they have this kind of dish, too. I guess this really is common in Asia.

Try adding some red or green chili plus citrus to the soup especially for early morning breakfast. U won't need coffee after that lol

In my culture, we do bile as well, but usually it's just several drops of bile in a fairly stiff alcoholic beverage. The Best Ever Food Review Show Host Ever has done bile across many cultures, and while he's never loved it, he's never hurled, and I do distinctly remember in my childhood reading somewhere that lionesses will specifically target the stomach contents of their wildebeest and zebras and what not for the beneficial effects of the digestive juices. I've determined I will someday try out that bile goodness to see what it's all about. But in the meantime, man those balls and bat looks awesome.
