Thanks for dropping a comment. It's a Rational 311 Variocooker. Plenty of information out there on it. I have an oldish model but they are essentially a big bratt/tilt pan with electronic control. Overnight cooking is a game changer. I simmer my bones overnight out of hours > go to bed > wakeup next morning and it's done.

haha yo leighton ive been lurking on the channel for a while but I'm finally going to comment. In the future I hope to get into medicine at bond university (not sure if you know it, but its in the gold coast) and I always dream about trying out your pho. I think it might be worth the 1 hour commute from gold coast to your restaurant, since I'm going to have to get accommodation next to the university it will be around that commute time. Love from Perth aswell!!

Hey Sam thanks for dropping a comment. Yes I’ve been past Bond uni down in Robina. The path to reach your goals sometimes means relocating. My story was similar moved from Sydney to Brisbane for this and it was worth it in the end but you need to endure some painful years at the start. Hi Joe I’ve never had anyone from Canada request this yet. This is the seasoning you’ll need if you wanted to make this recipe. It will turn your “base” into Pho. I will need to look into the rules sending to Canada first.

Hey Leighton! Just bought your pho seasoning powder and it is amazing and a taste that lingers on your tongue like a quality MSG. I was wondering…what is the synthetic broth flavor that is in the US version? Is it made of mushrooms or a vegetable or is food chemical based? Or is it a way to get past the FDA here in the states hahaha. I am genuinely curious because it tastes very beefy and I get why the yeast is in there. But I can’t stop being curious.

Brandon is it? It works - glad you took the leap of faith and brought a packet. I would love to answer that question but even I don't know the exact composition and formulation used by Knorr. These flavours or the secret sauce don't qualify as an ingredient therefore don't need to be disclosed =( It's a great product for most beef/pork based soups.

North Vietnam known for using less sweet, different flavor profile, and "proper Vietnamese language", Central Vietnam known for being where royalty was, spicy food, and Buddhism, Southern Vietnam known for do an ngot (Sweet foods) easy way of life, doing business and well you know the former South Vietnamese Republic where the majority of the Vietnamese diaspora comes from.

Love the video! But that first one isn’t Northern-style Pho-very far from it. It’s Southern. There’s only one true Northern Pho in Brisbane, and just three in all of Australia.

Las Vegas is not a place you want to visit in the States for Pho. SoCal, NorCal, Seattle, Houston, and Minnesota are the best places for Pho in the States.
