I travelled the world until I discovered Thailand. After that I had no desire to go anywhere else! Lived in Phuket five years whilst of course travelling to many other parts of Thailand during that time. I love Thai people. Thai food. Thai culture. It's the only place I feel is truly home. Everywhere else is just pretending. Back in Aus now but just biding my time to return. Enjoy your stay Luke.

That “yellow” rice is not because of the oil. It’s cooked in chicken stock, hence the amazing flavor.

@@DCspotts Well, the yellow rice is actually somehow derived from chicken fat/oil. The way we cook the rice is that we put chicken fat on the pan with the low heat to get its fatty oil, then we stir minced garlic with ginger and raw rice together, after that we cook the rice with chicken stock again.

I just adore all of the fresh herbs you get here with just a normal order. Same is true in Sonora, Mexico, at taquerias and elsewhere around the word. I haven't had all that nummy sides/condiments since I was at home in the PNW. What a treat! I'm trying to make up the difference by pickling and fermenting everything veg that we can get (banchan). They just come with meals in so many other places, like India and Vietnam (and more everewhere else--like salt and pepper)!

A great video on Phuket cuisine! Just two comments. From hygiene and etiquette issues, you should pick just the whole stem of fresh veg when eating khanom jeen, not only plugging the few leaves that you want. Don’t run your fingers thru the content of the basket. It’s ok if, after you pick out the stem you want, it is partially consumed because you don’t like it. The partially eaten veg will be discarded anyway. Secondly, the “dry porridge” was invented because the traditional “wet” porridge is often served hot and doesn’t suit some people in a hurry, wanting to chow it down quickly. Thus, the accompanying soup is served at a tepid temperature. Anyway, your uploads have been informative and enjoyable.
