This is the old fashion version of coconut cream pie. I got this recipe from my Mother when I was in my 20's and had just started cooking. I use to make this pie about once a week, I loved it that much. Hope you'll try this recipe. Be sure to cook the filling long enough to cook the egg yolks thoroughly. the pie probably needs to sit in the refrigerator over night to ensure the filling is not runny when slicing.

I still miss her so much. I quit watching for a while because I’d get so sad. My mother died in 2013 leaving a huge hole in my life. She was my best friend. I stumbled onto Phyllis’s videos. She’s like everyone’s mother. I can’t explain it except to say she felt like a surrogate mother. Such a sweet, sweet lady.

Now this is real coconut cream pie! Too many ruin it by not using meringue. It was my preference over cake for my birthday. You were so blessed to have her. A true treasure of a lady.

Well, you use a fork or the cutter to keep from heating the LARD. Yes, lard makes a far flaker crust, and it is better for the body to break down in digestion than shorting.

I will find a day when my house is quiet, just me at home. I’ll need that quiet to focus on following Phyllis’s instructions! I so look forward to making and eating this pie. Look at the genius of this woman!!! Saran Wrap to contain the crust, and then adding the meringue all around the outside of the pie! I would have made the biggest mess doing that if Phyllis hadn’t taught me otherwise. Even though you’re no longer here, you are still such a wonderful influence and teacher. I love and miss you so much. I feel like we knew one another personally and we could drop by to see one another at home anytime. 🥰🥰🥰🥰

I learned how to make pie crust and pies from my grandma and she always used plastic wrap to roll out her crust. I knew women who rolled their crust out on a floured cotton towel. It works but you need to flour it just right. Yup meringue sealed to the crust otherwise it shrinks and pulls away in the oven.

Oh how I loved Mrs. Stokes..I loved it when she would sometimes say hold on to your ears it's going to be a little loud while the mixer is on. She was so considerate of us! I had a wonderful Mom too we both were blessed... she spoke of you often and your children..I could tell she was so proud of you all. I can't believe she showed up in my feed today but I'm glad she did.. this is a video that I have never seen before and did not know about tempering the eggs and the milk...I just learned something new today. I miss her so much....love and hugs to all that are missing her today. I learned so much from her even today. I loved it when they would sit down together for dinner and have ice tea with their meal and always had dessert... Mr.Stokes loved it.

I learned so many different great recipes from Phyllis, but I must say, this pie crust recipe is the very best of all. She made making pie crust so much easier, no mess and a delicious pie crust that's never failed me. I always made pie crust like my Mom did, but this pie crust is just as much delicious as Mom's but just dramatically easier and NO MESS. I sure miss Ms Phyllis. I'm just glad she's no longer hurting in pain and she's up in heaven with Mr. Bucky, the love of each other's lives. Linda from Texas.

My grandma would use half lard half shortening, it came out light, flaky and sure tasted good. The lard really adds a nice flavor and it's not like you're eating a lot so I think it's acceptable.

Ok I did it, I made it and it turned out at least it looks beautiful I am so proud of it. The custard tasted Excellent and my meringue was perfect I was so so proud of myself I never done none of this before I'm 63 years of age but I went to work when I was 15 so I was never in the kitchen bacon with my mom so I want to say thank you Phyllis I know she's not with this but she was in the kitchen with me tonight in spirit and so is my mom so thank you Phyllis and Mom you'd be so proud of me. I tried to post a picture but I am not sure how to. But again Thx so much , I am looking forward to more recipes especially the chocolate pie and the brownies and well a lot more goodies. 😚

I love Phyliss recipies and her soothing voice. I learned 2 things. There is such a thing of frozen coconut and coconut cream pie deserves meringue. Never knew about either.

I have not been able to watch this channel for the last 2 years because I would get so sad. I miss Ms Phyllis so much and I think about her often. (Fun Fact) I saw a house for sale just recently in her State and I wondered if it was hers. It was so beautiful. It all looked very familiar. I loved Ms Phyllis and Mr Bucky’s house. I remember how much pride they had gardening and maintaining their home. This video popped up today and I’m so glad it did. It felt like going home and it was a lovely visit ❤

I made this today and it looks great. I swear this is the best utube recipe I've ever encountered. Phyllis, you're great. Here is a written version the way I made it today: Old Fashioned Coconut Cream Pie (1950’s) By Phyllis Stokes on utube CRUST Preheat oven to 425 deg. 1 ¼ cups all-purpose flour 1/3 cup plus 2 tablespoons Crisco 1 teaspoon sugar ¼ teaspoon salt ½ teaspoon baking powder 1 large egg yolk 3 tablespoons water FILLING In sauce pan, heat 1 cup sugar 1/3 cup all-purpose flour ¼ teaspoon salt 3 cups whole milk Add above filling into bowl of yolks a halg cup at a time to prevent yolks from cooking. 4 egg yolks, slightly beaten 1 pkg (6 oz.) frozen coconut by Bird’s Eye (save 1 TB for top) 1 teaspoon vanilla ½ teaspoon almond extract 3 tablespoons butter MERINGUE TOPPING 5 egg whites ¾ cup sugar 1 teaspoon Cream of tartar Beat til sugar is all dissolved, add: 1 teaspoon vanilla 1 tablespoon coconut for on top, saved EGGS: Utensils must be grease free. Use a glass bowl with egg whites. Divide eggs having yolks in a small bowl (I used a 2 cup glass measuring cup). And the whites into a large mixer bowl. Its best if eggs are room temp to use. CRUST Large pie pan. Mix flour sugar, salt and shortening together. Mix egg yolk with the water and add. Shape flat and round. Place dough between Saran Wrap, roll out 2” larger than pie pan. Remove Saran Wrap on top and turn over into the pie pan. Remove the plastic and shape edges of pie dough as desired. Press it nice and flat to pie pan. Fork holes in crust. Bake at 425 deg. about 15-18 minutes or until slightly browned. FILLING In a pan, place the sugar, flour, whisk, add salt and milk on medium-low heat. When it begins to bubble on sides of pan and thickened stirring constantly. Remove from burner. Add the coconut saving out 1 TB for topping. In a bowl, beat the 4 egg yolks slightly to blend them. Begin to whisk the mixture from the pan into the yolks very gradually until about half of it is incorporated into the yolks, about one-fourth cup at a time, stirring after each addition. Then add the rest into the filling. Add the vanilla, almond and 3 TB butter into the filling. Whisk well. Cook until filling begins to boil and thickens. Spoon into prepared pie crust. TIP: If filling scorches, transfer it to a clean pan to finish cooking after you add coconut, flavorings and butter. I used a heavy pan and kept stirring with a rubber spatula = mine didn’t scorch. MAKE MERINGUE TOPPING Mix a little of the sugar with cream of tartar. Add this to the unbeaten egg whites. Beat with electric mixer until soft peaks form. Add sugar gradually while beating. Beat a long time until sugar is dissolved. TEST: Press some between your fingers to make sure that no sugar crystals remain. Add vanilla. Spoon meringue around edge of pie over hot filling, making sure it is sealed to the edges. Bake at 375 degrees about 10-15 minutes or until meringue is browned and coconut is toasted. How refreshing that you make your own pie crust! I had just watched someone make a coconut cream pie with frozen bought crust, 2 boxes of jello pudding and cool whip. My mom taught me how to make pie crust when I was 15 and that is what I always do. I also make the rest of the pie from scratch and feel sorry for people who have never had this from scratch! We didn't use baking beans in our pies years ago I remember my mum putting an old plate on top the pie pastry before putting in the oven, it worked great. Love watching your mums cooking vids she was a special mum I'm sure.🇬🇧❤️ I have subscribed.👍🏼

Oh my word! I am practically salivating watching dear Phyllis make this pie.... my all- time favorite! Colonel Steve, thank you so much for continuing to run your sweet mama's cooking account. I follow a lot of cooking accounts on both IG and YT, but this is my very favorite cooking show by far. Phyllis, your a genius. I have tried to make pie crust for years and haven’t been able to get it right. With your recipe and tricks I got it. I made the coconut cream pie yesterday and had it for dessert tonight and it wasn’t runny at all. Wish I could send you pictures. Thanks again for all of these videos, my wife and I love them. Phyllis everything you cook reminds me of my mom who passed last year at 92. She was a wonderful cook. We were so thankful for our delicious foods. I don't have to worry about your recipes being good. It's like I'm watching my mom cook or bake. Thank you for your utubes.

Oh my my my, that looks good enough to eat! It's a great looking coconut merengue pie and I remembered all the things you said about those 50's pies and even those different brands a types if coconut. My mother was old school and wouldn't dare use "pre ground coconut" but always insisted on grating fresh out of the shell flesh! My sisters and a sister-in-law would use pre shredded. Thanks for sharing! I now have an overwhelming urge for coconut merengue pie!)

i bet it tastes as good as it looks! i love coconut custard pie the best.pie making like this is a lost art,my grandma made the best pies.now that the older generation are leaving us these skills and all the tips/tricks need to be learned before they dissapear like the wonderful ladies that made them

I have seen so many pie crust recipes, but none like this one. All the rest are more of a pain in the butt to mess around with, hence I hate making pie crusts. But this one, I will give one last try. Thank you Phyllis, you were a special lady & we surely miss you.

Miss Phyllis, my mother used to buy the coconut and shred her own. Then she would whip the meringue by hand. I never questioned why she would spend all that time doing it by hand. But then when I started to make my own meringue, I wondered why she never used a mixer. That poor women worked her buns off. She was an excellent cook, though! Everything she cook was superb. Phyllis, Coconut pie was my Mother’s favorite, but she rarely had the time to make one because she had to work to support the family! I have been making this pie since I was about 10, my dad taught me he was a cook from Texas, we could not afford butter always used Crisco I use Butter Crisco now, only difference, I made two pies every weekend for seven years for my husband's dad, only difference was no calf slime ( meringue ) lots of old farmers don't like meringue, I would toast coconut and put on top. Sorry I never found these videos.

I like Crisco (butter flavor) for my crust too. My MawMaw used lard. We made our own.♥️ And always fresh laid eggs! She started teaching me to make these when I was 5 years old. I’m 74. I’ve made a few🤭 Thank you for sharing the past♥️ 3:49

I miss her so much I learned how to cook and make cakes and pies because of her I never have time to learn how to cook good meals for my family. It was always the same food and they were tired of it. Thank you for teaching me how to cook. she was a very special person rest in peace.

Back 10 years later. I think I will finally make this :) I will have to find shredded coconut. Perhaps they'll have it in the Asian supermarket, because I'm pretty sure the normal supermarkets around me don't have it. I miss your mom's cooking...

CRISCO makes THE BEST PIE CRUST, ice water, no fridge, flaky. That CRISCO dough makes a great "pocket" stuffed with meat filling. Also, CRISCO was the only thing they allowed you to use on your skin after plastic surgery it's that PURE GREAT make up remover and for sunburn, no peel. You may slide off every thing but your skin will not peel. Take it from a lily white, blonde Sicilian who was a lifeguard. Never sat in the sun again after the lifeguard years, either. 63 yrs, January 1, 2020. Love you, Miss Phyllis❣❣❣👍😋

You can certainly use the dried coconut. We had to let that pie cool for about 4 hours and still the filling was a little runny so dried coconut might make the filling set up faster. Walmart carries the frozen coconut in the frozen food section where you find the frozen fruits. Sometimes you can find it up under the apple turnovers in that same location. Good luck, Phyllis

I Really Miss Mrs. Stokes, I think about her all the time. I Totally loved her Videos. And Today I made her 1950's Coconut Pie. When I make a Coconut Pie, I only use her recipe. I make it along with her. All the way. I made my Pie crust first. And then the Pie. It always turns out Perfect.
