It has everything to do with temperature. Lychee originated from the higher regions of china where temperatures are cooler. Certain kinds of fruit trees like lychee need whats called a "chilling period". As he said in the video, lychee need a certain amount of hours of temps below 68degrees. It may seem that its due to sunlight because lychee will begin to fruit in the spring and fully ripen in early summer. But since the winter time sends in some cooler temps, this is what triggers the tree to send out its new growth as flowers.

Hi I'm from Australia and we have winters that range from 12c-25c and summers that range from 20c-45c would it be okay to,grow a lychee tree

SEQLD we have several and they grow with ease. Too much ease. The bush turkeys get to too many of them before we do because we haven't pruned them back often enough.
