We made this about 40 or 50 years ago. Used small bluegill, we scaled them, gutted them and then cut heads, fins and tails.

Did this about 50 years ago with small fish -over population of them in the pond. Old timers told me how. Very good and the bones dissolved No waste. Better than having a huge population of stunted bream.

I've only ever pickled redhorse and pike. Might have to give this a try sometime can't be much different than pike. Atleast with pike it'll dissolve or soften the Y bones enough to eat. I always add onions. Pickled onions alone are just a good snack.

Agreed. I had extra pickling brine so made an extra pint jar of onions. Glad I did.

So is the freezing necessary because you ain't cooking it then? Or is that what you're supposed to do anyway? I found out that we're supposed to be freezing our venison for a few weeks or months or whatever it was, before eating it. Hasn't killed me yet.

Yes. It needs frozen to kill any parasites that may be in the fish. It’s essentially cooked. That vinegar and salt brine sucks every bit of moisture out and cooks the fish. After you rinse it and soak it in an ice bath the bites of fish are bright white and super firm.
