I made these last year, but with fennel seed in addition, and all the spices left in the pickling jar - I only tried it because we had too many cherries, first batch was not great, but tried the second after six months and they were fantastic.

amazing idea could we use coconut sugar or maple syrup or any other natural sweetener in place of sugar :)

I use honey instead of sugar for pickling and I never had problems. 😉

We haven't tried it with those, so you'd have to experiment, but you can use maple syrup or coconut sugar in pickling instead of sugar.

should I keep it in the fridge or is a dark/cold place sufficient?

If you have properly sterilised your jars, you can store at room temperature for up to a few months. Once you’ve opened a jar, keep in the fridge.
