Hi Mary, you said any real salt is good but in your examples i didn't hear Rock salt. Will this still be okay to use? I'm new to the fermenting process

You always come with great positivity !! In India we preserve many food items mostly with sugar, salt or oil.. The method you showed is quite appealing!! I'll try this new method for preserving tomatoes 👍🏻 It's really interesting how a same product is prepared,preserved differently in different traditions...☺️ and Learning such different ways is something I always love the most !! Thanks, Mary! I have fermented green beans and stored them on the bottom shelf in my basement( 60F) and they lasted for over a year without opening and then lasted another 9 months in the fridge! They were crisp and tasty. Great presentation. Thanks again.

I tried fermenting for the very first time. I did a jar of zucchini relish using a small onion and banana pepper also. Opened it this morning to try and it was SO good. I will be forever thankful that you introduced me to jar fermenting. ❤️ Thank you.

I made my first Ferment a few days ago. I was pleasantly surprised at how delicious it was. As I was eating it my little dog looked like she wanted some. I figured it was too spicy and to stop her from imagining something she thought was tasty I offered her a piece of cucumber. She loved it, she wanted to keep eating it. I checked and it is fine for dogs. Since she has a congenital disease, I figured this might help. There are many videos on fermenting but honestly, I keep coming back to my Dear Friend Mary. Thanks for all you videos.

I fermented green cherry tomatoes with garlic and Mexican oregano. It was fantastic they tasted like expensive olives. I wish I had a bushel of green cherry tomatoes. I tried it with poking the tomato and it worked ok but I cut them in half worked better. Mostly I think because cherry tomatoes are more firm than ripe ones.

I use a canning ring and a coffee filter or two so I don’t need to burp the jar. This looks delicious! I will be trying this when my grape/cherry/pear tomatoes ripen.

I make cabbage water, fermented naturally, no salt, just clean water and cut up cabbage, perhaps many root veggies can be fermenter too like this, but cut it up very small; I grated it all, was fine, too...Must keep in a fridge, and it only tastes lovely when cooled..I use it for my stomach health...I love this channel, you are fantastic!!!

I just put mine in fridge after 4 days. Tasted and I’m not sure if I like it, but will continue and try it in 10 more days. I want to love the taste of fermented foods.

Hi Janice, if you are new to fermented foods, give the ferment at least two weeks in your fridge and then taste it. The ferment… In this case tomatoes… Will absorb more of the brine and become much more flavorful and the brine - which clings to the tomatoes - will be much less salty. It’s March 6, 2024. I’m recovering from surgery. I was on a course of antibiotics, plus I was taking Tylenol, aspirin, and Motrin to combat pain! I made a batch of this last year with my garden tomatoes! I can’t believe how good they taste! And the most important thing is that they will heal my stomach and intestinal tract issues! Sweet Annie , Dandelion are great for pain killer and also great as natural anti biotic along with Golden seal and common Mullein ! I went thru recovery after Appendicitis surgery I took maybe only 10 pills of Tylenol and 10 pills of antibiotic the rest of 140 pills of Tylenol I toss out in my trash can ! I know my dr would kill me if he know but hey it been two year now my stomach doing great with all the herbs and fermentations I learned and using ! Two main things daily I don’t miss : Prebiotic Green + Probiotic plan based food ! You can look up and Thnks me later ❤ love our bodies we don’t just use and abuse with strong chemical medicine ! Disclaim : I’m not expert to heal anyone ! But only here share what’s happens and work best for me

Your picture threw a cravin' on me 🤣 I happened to have emptied a dehydrator of whole dill heads and used dill in mine this time. I trimmed a dill head down to what resembled a wheel with lots of spokes and used that to hold mine down this time.

I used my neighbour’s grape leaves, to hold my tomatoes with jalapeño rings, down, and the peppers stayed very very crisp!

I checked mine today, and it’s finished, ready to go in the fridge. I added some jalapeño rings, and the tomatoes and jalapeños are pickled and tasty, the tomatoes are a tiny bit fizzy, too! Even my son, who’s not a fan of pickles, liked these, since their fermented flavour is different from “quick” vinegar pickles! I love your videos, Mary!

Regarding salt. You should use 2.5% or .025 salt to your relative weight of liquid AND contents. That means that if you have 600g of tomatoes and 250g of water, you'll take 850x.025 and so you'll need 21.25g of salt for a good fermentation environment.

This is by far the most in-depth video on tomato fermentation I've seen. When I first saw the time mark - close to half an hour - I almost decided not to take the time. I'm glad I decided to watch. A bit of info (and a caution) about chlorine in the water: Some municipalities put chloramine in the water. I believe that's chlorine bonded with ammonia. The purpose is to PREVENT the chlorine from evaporating out, so letting the water sit on the counter or even boiling it, won't work. The only way to break the chloramine down so the chlorine evaporates out is to add ANOTHER chemical! Further, evaporation won't eliminate other additives such as fluoride. If you live in a municipality or you have a water source that isn't your own well, it is by far better to use spring or purified water.

Thank you for answer re canning fermented foods. I love the taste of them but I have limited fridge space so I thought I could can them so they would be shelf stable but nowhere could I find the answer to "can it work?". Next time I do a batch of tomatoes, basil and garlic, I'll give it a try! Keep some in the fridge and can the rest. 👍 Hopefully they'll be just as tasty🤞

Ok, made first attempt at fermenting cherry tomatoes, basil & garlic cloves. Seems to be going well but the water on the top looks a little cloudy...is that normal? And I just want to say I love your videos and the way you teach! Please, please don't feel you need to limit your advice because of those who like short videos. Most of us appreciate your method of teaching!♥️

Celery juice and celery seeds are full of a plant salt that's why it can replace sea salt. I use celery juice and 1/3 the recommended amount of sea salt. I sometimes add some lactobacillus powder to speed things up.

I do that too to broaden the probiotic profile. Also add some plain water kefir (whey). Have done green beans and doing my cherry toms today. Ooh my yummy. Try putting a branch of the tomato plant in the jar and the tomato flavor just goes off the charts.

I watched this last year. Was scared of the results, even though I've done fermented saur kraut a ton of times! But the results were so amazing I won't be processing my tomatoes any other way! Thank you for sharing!

Hallo, Mary! Als geborene Italienerin bin ich selbstverständlich an alles interessiert, was Tomaten und Basilikum betrifft. Es war sehr interessant, was du in deinem Video gezeigt hast. Ich habe tatsächlich vor, das auch zu tun. Da ich aus gesundheitliche Gründen nicht alles allein vorbereiten kann, werde ich mir von meiner Tochter helfen müssen, wenn sie aus Bayern, Suddeutschland , mich besuchen wird. Mein Mann ist mir in solchen Dingen keine große Hilfe! Vielen Dank für diese Art die Tomaten zu konservieren. Bei mir ist bereits Abend und bei dir 14:00 Uhr. In the wide mouth jars…. You can use the little individual fruit/jellos cups they sell for kids… they fit perfect inside the canning jars and hold the food below the liquid (I fill my jars with salad fixings, then put the little cup inside and fill with dressing, then put the flat metal lid and ring on! Great for work lunches!! My kids fill theirs with ranch and fill their smaller wide mouth jars with veggies…)

celery has natural occurring sodium nitrates.which is why it can be used for fermenting..i use celery seeds and powder when i make bacon

Mary, I have made one ferment so far, and it was successful. My question for you is can I use a glass weight after the top basil leaves? And while it's fermenting on the counter can I cover the jar with a coffee filter and the ring from a canning lid? The reason is because that's what I did for a red kraut and it was successful and I'm so excited to ferment again! :)

These are anaerobic fermentations, so it’s best to keep air out. When you put a coffee filter over something, you create an aerobic fermentation. The final product is different, and may take on more of a vinegar nature than a true fermentation nature. These are different types of good bacteria that creat each of these Love, Mary.

Hi Mary, you are such a great teacher! I really enjoy the way you take your time to explain your processes. I have learned quite a bit from you - things I had not considered or thought about doing. Question: do you wash your vegetables with just water? I buy store bought produce and they tend to have more chemicals than home grown. I don't always buy organic. Is washing with water enough? I look forward to your reply!

Great question, and it’s an interesting one when it comes to ferments. Ferments really thrive on the natural yeast that are on produce so I don’t give them a good scrubbing when I’m planning on fermenting them. But I do rinse my produce with water. And to be honest with you, I don’t stress too much whether they are organic or not organic. It’s more important to me that people eat fresh food… Real food… And not cause themselves stress spending too much money to buy a particular type of organic food. Hope this helps. Love, Mary

New subscriber… I’m so glad that you didn’t use whey as my family are vegan 🌱 and I would not, therefore have tried this. I currently have 2 jars on the go: one with rosemary and one with bay leaves. They are both bubbling nicely. I’m scared I’ll waste them though as I’m unsure about using them. 🙈😳🤷🏻♀️Love your channel. Lots of love xx

Sweet 100s and Juliettes? Just sat down to rest after picking my own tomatoes and basil and saw your video. Also a whole lot of green and yellow wax beans. Bush beans are fine but my vining beans are about done. Any tips on how to keep them going in this heat? Just washed out a couple half gallon mason jars crying out for use. This sounds wonderful. You are so thorough with your teaching and I thank you for that. Question: would this be a ferment where I can use the pickle pipe instead of burping? Wonderful tip about refrigerating after a few days. So look forward to your teachings, Mary!

Hi Mary , I cannot stop thinking of some kind of fermentation closet for instance. It might fit nicely in the curtained space behind you. There being plumbing on that wall, a copper piping circulation tube might be useful for the height and depth of such a space. Warm for rising dough, cooler for too much warm situations. Copper emits so efficiently.

I have a question about shelf life of fermented food without refrigeration. While in the process of fermentation, you say that we can let the gas out the jar by unscrewing the cap a little. Although is this considered to be a jar that "has been opened". Because on differnt other websites they say that the jars can be store on a shelf IF IT HASN'T BEEN OPENED. Would really love your answer on that topic. Thank you very much.

I have a question ..... I put Olive oil instead of water .....and I punch the hole not at the top but the side.............. it was just a little bottle I tried , but how bad did I goof ? you are so pleasant to listen too , thank you

When you did this, did you refrigerate it? The method that you’re using is not a ferment and you need to be careful when submerging fruits and vegetables in olive oil and leaving them at room temperature. You are creating an anaerobic environment that can open the door to The development of botulism. Be careful!! I would discard them. Love, Mary
