This is how our family cans pickled eggs! It’s a great high protein snack for when your busy and on the go! You can get so creative with this recipe by adding sugar, hot sauce or even a splash of lime! Play with it and tailor it to your liking!

i water bathed 6 large jars yesterday and did a big gallon jar for the fridge; lets see how it went. Never had them in my life as I always thought it looked like a science experiment in my grandmothers fridge and was terrified as a child. My husband grew up loving them so I made some for him. I may try once they have cured in the fridge for a few weeks.... 61 yrs old and willing to try anything once; on my bucket list of things to do ....lol. Pressure canning was also on that list and got over my fear and now can meats, veggies and sauces. Love preserving foods now

For your readers who wish to do smaller batches of brine, based on what you said, "15 cups of vinegar : 0.75 (3/4) cups of salt". And by extension, to every cup of vinegar, add O.05 cups of salt, (1 cups of vinegar : 0.05 cups of salt) - which would be 2.4 tsp. of salt per cup of vinegar. FYI.

You're better at math than I am! :) I was just going to divide the recipe by 3 and use 5 cups of vinegar and 1/4 cup of salt.

I've often wondered about canning eggs vs. fridge method. Been canning for over 35 years, thanks for proving it can be done!! I know that the brines I use call for water & vinegar, but if it isn't broken - don't fix it!! Great info..

Unfortunately because it is a non-USDA approved recipe there is no shelf life. However, I have eaten mine up to nine months.

Love your videos! I just learned to steam fresh eggs for 18 minutes, cool with water and peel comes off easily. Start at the top of the egg where the membrane is. Magic!!

I steam my eggs as well. I have a little egg steamer. I pop the eggs in, 14 minutes later the buzzer goes off and the egg is perfectly cooked and the shells come right off perfectly ( most of the time.)

Thank you so much for this video. I have done the fridge pickled eggs in full vinegar brine, the vinegar was a little too strong for our liking. Thank you! Super easy! A the places I looked for canning eggs, led me to here. So thank you! My chickens are laying so many eggs. So I'm greatful to find a way I can store them longer, in case SHTF. (Also if you took your garlic cloves and put them in a shaker, like 2 cups together, or a container with lid, and shake them, the outer part of garlic clove comes off super easy) thanks again!

Thanks for the video. I'll be canning eggs for my 2 month commercial fishing job in AK. Eggs are not that easy to find nor are they inexpensive in Naknek Alaska so I'm going to bring my own. Also, I am a huge proponent of keeping our lives in the private domain, leave the public domain for those doing direct commerce with the state. So the alphabet agencies named can take a long walk off a short dock. Lastly, my compliments to your husband and the parents that made you, you're insanely gorgeous!!

Thanks! Great tutorial. Not to nit-pick, but the second your jars are exposed to open air, they are no longer sterile. I learned this growing mushroom spawn. Sanitized, yes. But not sterile.

Because the eggs are preserved in a acidity, the vinegar. Its like pickling unions

I made red beet eggs and pickled cabbage just for the fridge and they self sealed without using a water bath. Perhaps I will try your recipe complete with the water bath part and just keep them in the fridge to be on the safe side. I don't think I would be able to not eat them right away anyway. The longest the refrigerator pickled eggs last is maybe a couple weeks because I can't stop eating them...

Just found the channel. Found the video because I have wondered about canning my pickled eggs. I just wanted to say " I personally" use only the " unbroken" egg white or perfect egg. Because the yolk has a different consistency that the egg white, and as a result if it is exposed to the brine it breaks down and makes the brine very cloudy... I look forward to canning my pickled eggs. Free up a little space in the fridge. Thank you. Excellent video

Questions: did you use hot brine & hot jars? I just made some for the first time and they turned brown in stripes like they'd been scalded and although they looked safe to eat they were VERY chewy - way overcooked. Thankfully it was a practice run with just 8 eggs (4 didn't pass the peeling stage). They were very fresh farm eggs, day old at the most. thanks ~ Mari

For fresh eggs that you get from your chickens if you put your eggs in a double boiler and steam them for 20 or 30 minutes the egg shells come right off I got this from Jill Winger she lives in Montana on a cattle ranch has different books out has a podcast weekly. I tried it and it works I hated peeling eggs but now really easy

My chickens are over producing.... So, I can all kinds of veggies from my organic farm. I learned that I am not supposed to can pickled eggs... HOWEVER, I am going to do it! Question, are the eggs cold when you are putting them in the jar AND are you pouring in hot pickle brine over the eggs. If I can get away with not having to pack the eggs hot that is great.... and just use hot pickle brine. Thank you for posting this video. I have about 50 dozen eggs in bushels aging right now so they will peel!

I try to pack the eggs hot if I can with hot brine. You can also water glass eggs as well. That's another really good option if you have an abundance of eggs.

Do you reheat the eggs once you let them sit in ice? If so how do you reheat them? What temp do you get the water up to?

@@fmoon3079 They are likely still a bit warm. The ice water especially helps with loosening the shell from the egg so you can peel it perfectly, without nicks like in the video. My eggs never turn out perfect like that.

I make them all the time. I have about 10 different ways. Short term "cause I eat them. How long do they last when canned? They look delicious. And you use no SUGER!!! A plus. Please share. Thanks.:)

The eggs are very vinegary lol. But I like that kind of taste. They can last about a year. Sometimes I will add hot sauce and a splash of lime when I open them and let them sit in the fridge for a couple of days. Game changer! 😊

Thanks for the video but I got one question so what happened if I use a weird shape egg that has has a few cracks on it. I already made a batch and some of those eggs have cracks on it. I haven’t opened the jar yet and they’re sitting on my pantry for the last seven days should eat it or not.

I would really love to learn about homemade vinegar. I’ve been watching other videos but the goal of a true vinegar is to get it to the 5% acidic level which is so crucial in home canning.

So Im the skeptic that would get gun shy when it comes time to eat them. Is there any reason to not pressure can them for a longer time to make it more "safe". Personally If nothing else I would be willing to put in the extra effort for the piece of mind alone. Unless there is a reason not to? Thanks for the video, enjoyable

So you don't add any water to your brine? I've seen other cut the vinegar like 1/2 vinegar and 1/2 water. Just double checking. Also when you used the APPLE CIDER VINEGAR wirh the white vinegar did you do half and half with that?

I don't like anything pickled usually, except actual pickles. But after watching your videos, I am already canning tomato sauce and will try a pickled egg bath. At least if I don't like them my hubby will eat them!

I just love your videos. You are my absolute favorite person to watch on youtube. I love your Amish series. I am trying to figure out how to make vinegar at home and although I have found several videos they all say dont use in canning and that is exactly what I am wanting to make homemade vinegar for. The videos I have watched all say you have to buy store bought vinegar for canning. Is there a way to make 5% vinegar for canning at home. I want to be safe but yet I would like a homemade option.

What is the temperature of a "hot bath" at the end? Does it matter how long you cook or the temperature you cook the brine? I usually add spices to the brine and this recipe adds the spices to the jars? Is that preference or is that for the pickled eggs to be stored for longer? If you add honey or sugar can you cook it in the brine like you do with refrigerator pickled eggs. Thanks so much

Ok, so Ive never made pickled eggs because they're weird. Hardish & rubbery & waaaay to much vinegar for me. Is there a way to make these without all of that vinegar? Bleh, bleh, bleh. LOL! Do you let your brine cool before adding to eggs? Or can it be poured while hot? I have made homemade pickles and poured the brine in while hot, helped to seal jats. Didn't know with eggs if would be different. Thx for the info & video!!

When waterbathing them, was the jar completely under water? Ur just until the headspace?

Curious, does it have to be in mason jars to pickle them? I have many empty plastic containers large enough to hold a dozen or more eggs into it.

If you are refrigerating the eggs, and not canning them, it should be just fine. 😊

Hi, great info. When you put your eggs in the jar do you reheat them before doing that and how hot? How do you reheat them? Put them back in boiling water once you’ve peeled them after you’ve let them sit in the ice water ???

I try to pack the eggs hot or warm if I can. If I had to reheat it would be a couple of seconds in the microwave or just hot water. I don’t have a specific temperature to bring it up to. If the eggs are super cold you can heat them up with the brine in the canner until you get to a full rolling point to start your time. I know some of my friends don’t heat the eggs at all and have never had a problems. I hope this helps.

I’ve seen other videos and they add water to their brine. I noticed you didn’t. I just made my brine so just wanted to double check!

Yes, some people do add water. I was thinking on experimenting with that as well cause it’s super vinegary. I guess that’s to be expected considering the brine is all vinegar LOL.I’m so glad you made some! Did you add water? If so please let me know how it turned out😊.

@@MakeitMake I didn’t. I was trying to stay as close to your recipe as possible and I didn’t know why they added water and if it diluted the ph of the vinegar. I have a straight AC vinegar that has a higher pH and I have to dilute it down to get braggs ACV pH. I used Braggs ACV for this. This is my first time. I am so nervous about botchulism. But all my neighbors can and they said they’ve never worried about it or perfect eggs so I’m not going to worry about.

Approximately how long will the chicken eggs keep on the shelf in a cool dark pantry? I have seen people from Azerbaijan do it similar to your method.

About 3 weeks ago, I made some pickled beet eggs with beets and eggs and I put them in the fridge. I am not eating them very fast. Can I can these at this point?

They’re Sanitized… not sterilized, and thank you little lady, they are Delicious!!! The quail are $13.00/pint on line and the hen are 4 bucks and up for 6. Holy Moses!

For the eggs in the instant pot you might want to try putting them on steam for 19 mins....quick release...into cold water....peel when they are still a bit warm...the peels will come off effortlessly!

Ello all. So, I canned some pickled eggs yesterday per the instructions. Today it's been 24 hrs since I removed the jars from heat. As I'm moving the jars around and removing the rings, I'm noticing little bubbles moving all around racing to the top in every jar. It's my understanding that this is a concern. Should I be concerned? Any thoughts? Thank you
