I made this yesterday for Thanksgiving. Used a boston butt. The meat was fall apart tender and the pumpkin tastes like some kind of squash. I may try it again with a sweeter liquid instead of the Redd's hard apple cider I used. Definitely a keeper recipe.

I think im going to do my version with lamb meat. since sweetness works well with chunks of lamb and i just love lamb. then season with cumin, salt, pepper, thyme, and use a dry cider plus the red fruit kronenbourg beer into the pumpkin. im also thinking stuffing the inside with some basic fragrant vegetable as well.

When I make stuffed pumpkin I make a mix of pork, sausage, and rice (brown and wild). I also sometimes add raisins, figs, or dried apples along with autumnal spices to add sweetness.

I started watching you about 3 weeks ago. Made the Root beer lamb ribs, with fondant potatoes as a side. That got the A+++ from my family. Earlier I made the "milk" braised pork. That made my wife VERY happy.

Another great recipe from Chef John! I couldn't find a pie pumpkin large enough, so I made two: one with a little pie pumpkin and one with a small jack o' lantern pumpkin. The pork came out perfectly in both - I couldn't tell which was cooked in which. The pie pumpkin's flesh was, of course, much better than the stringy, tasteless flesh from the jack o' lantern. Next time, if I can't find a large enough pie pumpkin, I'll just make two - or more.

I have been making meals in a pumpkin for years now with ground meat and rice stuffing, stews or curry. My family loves it! Never did try just meat and I have to say this was the best EVER! Thanks for this!

Reporting back, I found that at around 3 hours in the oven, my pumpkin split open at the side and was no longer a "show stopper." But I put the meat in it's serving dish and picked out the pumpkin skin from the pyrex baking dish and ran everything through a food mill. What resulted was one of the best Pumpkin soups I have ever had. Also the pork was pretty good.

I watched this video and went out bought a pumpkin. Before I cook it, I want to ask you if there was oil/juice at the bottom of the pan after the pumpkin was cooked? When the pumpkin was placed and the oven, the pan was dry. I am wondering where the oil came from.

@@garystone2863 true, they're the part of the pumpkin that sends nutrients to the seeds so they're packed with flavor. I knew an award winning baker who used the guts specifically when she wanted something to have a strong pumpkin flavor, like a pumpkin sauce i once had that was delicious.

I did this last year and it was amazing. None of the grocery stores where I live sell pie pumpkins as large as what the recipe calls for, so I ended up using two smaller ones. They were still visually stunning and delicious.

Chef John! Fantastic recipe! I improvised since my hubbie won't eat red meat (or the other white meat) and used boneless, skinless chicken thighs. My pumpkin was too small to use all the meat I had, or for 2 cups of hard cider😳. I just used what I could. What a yummy meal! Then I did a stuffed squash last night but used a meat loaf mixture of pork and veal. It wasn't as good as the pumpkin, took WAY too long to bake, due to the solid meat mixture, but I WILL try it again with pieces of chicken and more sauce/juice. Thanks again for a fantastic idea!😉👍

I did this with stuffing one holiday. It was a big hit for looks, but my family didn't gobble the pumpkin down, so we haven't repeated. (My sister does have a gorgeous pumpkin-shaped serving dish, so that is pretty, too, and we fill that with something the family loves.) Thank you, Chef John, for a great idea for meat in a pumpkin! If I didn't use onion, the leftover pumpkin flesh would be safe to give the dogs! They love pumpkin. In order to keep it cute through dinner, we scraped pumpkin flesh from the inside, leaving the skin intact and beautiful.

I think you'll need a large pumpkin to accommodate the the leg bone. Of course, you could strip the flesh from the bone, something you should do anyway to remove the tendons.

We have something similar here in Brazil withna different type of pumpkin called "Camarão na Moranga" where it is done with shrimp and "Carne-Seca na Moranga" where we do it with salted pork

@@recoil53 The shrimp is only finished inside the pumpkin, as is the salted pork. Basically the pumpkin is baked while the filling is made, and then yhe filling is added when the pumpkin is almost done for one last blast of heat. This is definitely a 5 star dish both in visual impact and taste. Made this but did not have hard cider, used regular cider fortified with some Sake and it worked well. Comments included that it transformed the pumpkin flavor, and the meat was very tender. Will make again. Thanks chef John.

Made this for my dad today. Had a couple pumpkins in the garden. Except I used a bone in pork shoulder, and trimmed the lean meat with some marbling. The bone and left over I cooked down for some split pea soup. But instead of apple cider, I used Yingling beer. Let it set over night, then baked today. I also surrounded it with shredded potato. It was awesome. This is an awesome recipe. The pork was so tender, with such flavor, and the pumpkin was better then most squash. Next time I am going to try a mix of beef and pork. Maybe add some apple.

I have made this a few times per year now since watching the video about 3 years back. It's the first thing I think of when the Pie (sugar) pumpkins show up at the store. This season the pumpkins are a bit small (1/2 volleyball size ), so I just bought a large pork steak instead of a large pork butt. Even browned the bone up and shoved it in the pumpkin with the meat. Chef John, thank you!! Maybe I will make an out of season version with canned pumpkin some time. 😆

Pumpkin meat from this dish makes a wicked soup. Scraped out, put into pot, add some chicken broth, heat up, immersion blend, add veggies and/or meat. Really flavorful. Thanks Chef John.

Totally got my right eyebrow raised with that idea! ... I could probably concoct some kind of recipe (any would do as long as it has LOTS of bacon, but how long to bake is where I'll mess it up.
