The Fitness Chef, Charlene Procope-Delph makes a hearty Pigeon Peas Soup using some fresh pigeon peas from the Namdevco Market. Try the recipe below.
PIGEON PEAS SOUP
From Charlene Procope, the Fitness Chef on Cup of Joe Caribbean
1 tablespoon olive oil
3 cloves garlic minced
1 stalk celery chopped
1 lg white onion
1/2 cup leftover ham cut in pieces
2 cups fresh pigeon peas or frozen drained
1 teaspoon Italian seasoning
1 tbsp Adobe or all purpose seasoning
1 medium potato
1 sweet potato cut in cubes
1 carrot chopped
1 tablespoon tomato paste
1 cup coconut milk
2 cups water
1 Hot pepper
¼ teaspoon of salt
Instruction
1. Heat oil in a large pot over medium-high heat, add onion, garlic, celery, green onion and cook until onion is soft and tender about 3 minutes.
2. Add pigeon peas, Italian seasoning, allspice, vegan bouillon, potato, sweet potato, carrots, ham ,tomato paste, and stir.
3. Add coconut milk, vegetable broth or water, Scotch bonnet pepper, and salt.
4. Bring to a boil, reduce heat to simmer for about 20 minutes or until vegetables are tender and soup is at the desired thickness.
