Do you have any idea what a pig wing is? Well, follow along and we'll show you! We'll answer that burning question you've had for the last 5 minutes; what are pork wings anyways? They're pretty self explanatory and they have nothing to do with chicken wings or buffalo wings, but we think that they are just as tasty!

There's a restaurant chain in MD called the Green Turtle. They serve these and call them HOG HAMMERS !! They are soooo delicious! Thanks for this video!

I've heard of these but had no idea where they came from. Since you only brought the internal temp up to mid 150ish, I'm guessing these are as tender as the pork loin? Would have never dreamed that in a million years coming from the shank, but I'm thinking it is low enough on the shank, that the muscle doesn't see a lot of work, like the calf part would? Very cool video indeed and now I want to source some of these out. Gonna check your website out and order some rubs guys. Glad I found your channel. Very legit and real deal!

Love German style pork hocks. Come out tender as butter. But another whole different cooking method. If nothing else, will get the hocks from the butcher and carve these out myself. Hocks are cheap, but another 10 minutes of butchery to make the wings will probably double their cost. :-/. These look superb. No to try making them.

I was a butcher by trade for 23 years deboning pigs cows and sheep. It's always interesting the cuts are different in other countries..I live in the Netherlands. Keep up the good work..

I've been butchering since '06 and was trained a couple of hours from you folks in OH and did not know how to do these. I've worked in OH, TX, and a couple of spots around the Mid-Atlantic. There is a chain restaurant in the Mid-Atlantic that sells these as 'hog hammers' and I could tell they were something out of the legs but I couldn't figure out what. I learned something today!

Milk tank. I remember fondly my aunt saying "We need more milk for dinner." And taking a plastic gallon pitcher out to the barn and filling it up from the stainless steel tank in the milkhouse. You want to know how we grow them so big on the farm? That's how. Fresh milk straight from the cow.

Before Covid shut down my business travel, I made a monthly trip to Springfield, MO always staying at the Doubletree Hotel. Each night the concierge lounge featured a different appetizer. This is where I first had pig wings aka pork shanks. They were cooked in a broiler, but still were the most popular appetizer they offered. I can definitely see where grilling would be the way to go.

Never been a disappointment at all. You guys find the coolest cuts of meats just like on your beef you found the Denver cut. I always enjoy your videos. I always learn something new with each video. You guys explain things in such a way that I understand what you are talking about. You guys are great teachers.

I used to work in a smokehouse in Montreal. My boss ordered a bunch of Pork wings in order to try out to see if they would end up on the menu. The same day the delivery of Pork wings arrived, the company told him that the demand for them is low and they won't be supplying them. So we just had 5 lbs of pork wings to smoke and eat ourselves among the kitchen Staff. I still can't get over how good they were.

I work at a maple leaf pork plant. A coworker of mine told me that they had "pork wings" they served at his dad's retirement home, and that they had come off the shank bone. Took me about 10 minutes but I did eventually figure it out about the same as you guys, though we don't use any saws except on the neckbone/brisket. I keep trying to convince the bosses to let me buy a few shanks with meat on so I can try this at home myself. I really hope these start to take off!

For the viewers info! I have been trying different pork seasonings for ribs and butts the past few years. Have like some of the rubs but never extremely pleased with them. Came across the Bearded Butchers videos and started watching, then saw their rubs. I ordered a few bottles of the Hollywood to give it a shot. I have cooked babyback ribs with the Hollywood and last week cooked butts for pulled BBQ with the Hollywood seasoning on a Kamado Joe with lump, absolutely amazing!

The only problem is that any of the local butchers who cut per request only sell pig halves. So if I want 12 pig wings for my guests I'm buying 6 pigs. :D

Great video!!! I’m a 67 year-old life-long cook. Recently went back to work, helping a friend of mine who, unfortunately, signed a 5 year lease on a small restaurant about 18 months ago. I never was a bbq guy, having been formally trained, and seeking high-end culinary positions throughout my life. After retirement I started exploring other kinds of cuisine including true Hispanic cooking, pizza, Mediterranean food, ect. Always did manage to have a nice outdoor grill at HOME, though. When I first showed up at my friend’s restaurant I noticed a fairly large (and old, warped ) offset smoker in the back of the building We have, since I came on board, utilized this smoker to enhance our Greek entree’s (it’s a Greek restaurant). The popularity of this place has soared, with all our Nashville local diners wanting more and more smoked items (I even smoke fresh horseradish root to make the dipping sauce for the calamari). Was running out of ideas, up until now. I buy and butcher our own lamb (BIG Greek seller), and will use the knowledge that I got, from this video, to make Lamb Wings. Thanks, guys!

Just smoked 2 pork tenderloin they came out awesome and juicy . Smoker temp was 225° cooked till internal temperature was 150° Used Butcher Brothers Black and Cajun rub the Cajun rub is phenomenal

I have a local bar here in ct that serves them know I know where from in the pig. They deep dry them yours looks so much better but 6 of the for 12 bucks and 12 for 19 here. Now I cant wait to order them next time

True, although there might be a possibility of Bambi wings, deer shanks are structured to be much thinner compared to pig shanks, so it's safe to say there's little to no Bambi wings, as sad as it sounds. 😟

Awesome, I can't wait! Well now that we know that pigs have wings & could fly, but the biggest problem is the pigs don't know they could, so I really doubt it'll ever happen. It's easier to catch them this way, keeps the labor cost down!

Now you've gone and done it. 25 years ago, the only people that ate chicken wings were people on a budget and people that crabbed. You'd go to the local chicken processor, purchase wings, necks and backs in 25 and 50 pound bags to use as bait. Necks and backs were 25 cents a pound and wings were 30 cents. Now the grocery stores thing chicken wings are worth $2.79 or more. Nice video. Good thing I just finished dinner or I'd be hangury.

With all these delectable's you should strongly consider a Diner ( 50's Style ) on your property . You got the Cuts, You got the Spices , you got the cooking, now all you need is a place to showcase your masterpieces . From the cooler to the table. Kinda like those specialty seafood places where you choose your own lobster ( Except I feel your harvesting techniques are far more humane ) Name the Diner after your dear mother " Bunny's Grill " ( Just be sure to point out there is no rabbit on the menu or someone may complain of a Hare in there food. )

I don't know if you all have been or know The Greene Turtle they have the pig wings but they call them Hog Hammers. They were awesome. Them pig wings look amazing.
