Pineapple cake ingredients:
For making 24 pineapple cakes
Pineapple fillings:
Pineapple 1: weight 1350 g after peeled
baking soda: 1/8 tsp, it is optional, only if your pineapple is very sour
Sugar: 200 g
Black sugar (dark brown sugar) 50 g
maltose: 100 g
Pineapple crust:
Unsalted butter: 125 g
Icing sugar: 50 g
Egg yolk: 1
Honey: 1 tbsp
Cake flour: 200 g
Milk powder: 20 g
Almond flour: 25 g
Baking powder: 1 tsp
3.5 x 5 cm pineapple mold, each pineapple, filling weights 15g, crust weights 18 g
Preheated oven 375°F/190°C, baking for about 10 minutes.
