Thanks for this recipe. Your printed version says to cover the pineapple while it is cooking but it isn't covered in the video. Which is the preferred method please?

Hi Mark, apologies for the late reply. covering with a lid and cooking serves 2 purposes. 1/we usually cover and cook when curries need to be cooked for a longer time to maximize the heat from the stovetop. 2/to avoid anything unpleasant falling into the curry if you should leave the curry and move around the house for other chores. Even though I have mentioned it on the recipe card and not shown it on the recipe card, it won't make much of a difference covering the pineapple chutney so you can cook it covered or uncovered. Chutney with no vinegar? I never heard of such a thing.

Inkbrain, there are many chutneys, Indian and Sri Lankan in which vinegar is used and not used. If If I were to bottle this same chutney then I'll probably turn the pineapple into a pulp and use vinegar to preserve and add more acidity to it. Regards, J

@@islandsmile4902 Thank you. I am going to make my chutney today, but a different recipe. I am going to boil whole cloves, cardamom and cinnamon-stick in water, add chopped pineapple, boil till tender, and add salt, vinegar and sugar and chilli flakes and sriracha and cook till I almost have a syrup. That's how i remember my grandmother's chutney, except she did not add sriracha.If I had dates I would add them too, but I don't. maybe I will add some chopped granny smith apples. I have to look at what i have in my kitchen. Than you for responding. God Bless.

@@islandsmile4902 It came out almost perfect. I think I should have added more sugar and cooked longer, because there was a small amount of liquid when I got done, but the taste is great, Thank you for your kind words, good luck and God Bless.

Hi Aamina, YES!. there's a sweet and spicy element to thid chutney so definitely works with biryani.
