This sounds amazing! I don't have access to instant pudding mix and so I will be making it from scratch. Would you happen to know the approx number of cups of pudding the instant mix makes? Thanks!

The pudding mix makes 2 cups, so I would just substitute some of the liquid in the pudding recipe for pineapple juice!

I haven't tried with buttermilk so I can't say for sure, and I'm sorry but I do not know the cake's weight.

You can definitely make cupcakes with it! I haven't tried with half oil and half butter but I think it should work fine.
