OMG, I ran across your recipe by accident. It's Christmas time 2018 and I was just telling my husband that I would love to make my mothers famous pineapple coconut cake for our family Christmas Get-together which will be at my house this year. I never new how my mother made this cake she passed away 2 years ago. When I saw your recipe I cried....I think my mother sent you to me. The only difference is she made a rectangle cake and it was my familes favorite. I'm going to surprise them and make it. So thank you and God bless you.

Carolyn I'm a professional Chef and Pastry Chef. I have watched many KZbin videos of people demonstrating their home cooking techniques. I make cakes all of the time, I haven't been able to in the past 2 years, because I've lost the ability to walk. I've always been disabled I thought I would be ok not walking I thought I was ready but you never are truly ready for these things so, I don't have a disabled kitchen setup, we now have the money to redo the house I can't wait for my kitchen, and I'm so excited, because I'm going to be able to bake. Hey Carolyn. I have been looking for this recipe forever. One of my Granmothers from SC use to make this for us all the time during the summer. No lie her cake had a shelf life of one hour. If you didn't get a slice when it came out the oven all you got what stories. I have never seen any of my Grandmothers cakes last a day. Your cake would probably last about 20 minutes at one of our family functions lol. Thanks.

This cake was AMAZING. I will definitely be making it again, and especially for holidays. I poked some wholes in each of the layers before I put the filling on top so that it would seep into the cake a bit. It was wonderful :)
