Pineapple fried rice is one of my favorite fried rice dishes of all time. It's umami, salty a little sweet, and has the perfect balance of curry flavor that is not overpowering. With some crunchy roasted cashews, this pineapple fried rice is heaven. Hope you give this easy recipe a try.
