Just wanted to share this quick video I did while making Pooris. They are crispy and puffy and come together in no time. This is how I made mine this time with APF. This amount was enough to serve two meals for me and Pulasthi. You can refrigerate any leftover dough, well covered, and then make pooris whenever you want. Best when you serve them hot, just out of the fryer. All purpose flour - 2 cup Semolina - 2 tsp Melted ghee - 1 tsp Enough water to make a somewhat stiff dough. Roughly about 3/4 of a cup. Mix them all and knead to make a nice pliable dough. Cover and rest for about 20mins. It’s easier to roll the dough when gluten is relaxed. Make small lime size balls. Roll them thin and deep fry until crispy and golden.

This really is the best, you guys! It's so aromatic and absolutely makes the best meat curries. I even use this as a marinade when I make meat stir-fry dishes or grilling/air-frying. Amazing to sprinkle on vegetable curries as well. Hope you give it a try!! Ingredients: 3 tablespoons Coriander seeds 1 tablespoon Cumin seeds 2 teaspoons Fennel seeds 3 Pieces of Ceylon cinnamon (about 2 inches long each) 1 teaspoon Cardamom pods 1⁄2 teaspoon Cloves 2 teaspoons Black peppercorns 5 Dried Chilies 2 Sprig of curry leaves 1 Pandan Leaf, broken into pieces 1⁄2 teaspoon Black mustard seeds (usually fry with residual heat of the pan) 1 tablespoon Grated coconut Dry roast each ingredient separately, in medium heat until they turn brown in color, dehydrated, and fragrant. Make sure to stir/mix them continuously while roasting to ensure even roasting. Do not let them burn. In any case, if you burn a spice, discard it as it will turn the spice mix bitter. The time it takes to dry roast each ingredient is different. Some would take a few seconds and some might take about a minute (eg: coconut, curry leaves). Let the spices cool down on a tray or a plate. Grind finely in a coffee/spice grinder. Store in an air-tight container.

I LOVE this tuna cabbage stir fry. It’s one of my absolute favorite dishes to make when I want something very quick and easy and also feel good. Trust me some warm rice and a runny egg is all you need to pair with this. I shared this recipe last year on my blog and KZbin. You can find quantities and more information there but, you guys, you don’t have to measure anything for this recipe tbh with you. Stir fry some garlic, curry leaves, pandan leaves, and ceylon cinnamon in some coconut oil. Add your canned tuna, cabbage, onions and green chilies. Then add the spices: chili flakes, black pepper and turmeric. Add soy sauce to taste and finish off with some tomatoes for acidity.
