This is the best video on making mooncakes I’ve seen. The best tip was how to form the dough. I’ve been rolling it flat and then shaping around the filling. It often tears and is not even. And is so much thicker at the bottom. Your way is so much easier- thank you 🙏🏻.

I made Mindy's moon cake recipes last year. Purchased the beautiful design presses and red bean paste. They were fun to make and delicious. Still want to try homemade lotus paste. Definitely will try pineapple recipe. Thank you Mindy. Your videos are marvelous.

Pro tip, lightly oil the measuring spoon before using it. The filling comes out very easily.

A #50 or #60 cookie scoop, sprayed with cooking spray will make short work of portioning the pineapple jam. Also, if you oil your hands to roll the jam and handle the dough, it will stick less.

i made these with peach instead of pineapple and the flavor was great, but i couldn’t get the filling to be stiff enough to be able to wrap them properly, im going to try adding some corn starch next time to thicken it up a bit more

However, I would like to ask if it’s okay to adjust the sugar or the measurement have to be exactly the same in the recipe?

Hi, to be honest, mooncake contains a lot of sugar, which does help with consistency. You can reduce a little bit of sugar but don't reduce it too much, otherwise, the texture won't come out the same.

LOL! The Asian market around where I live sells mooncakes. They have lots of flavors: red bean paste, lotus seeds, salted egg yolk, sesame, fruit, five nuts... Check the asian market around where you live. You may find some.
