Awesome. I just started two 4.6 gallon batches of 'Black Sage' mead (hydromel) on Wednesday that should turn out at 6.7%. I am switching from making beers which I have won many awards to making mead which I know nothing about the nuances of.

Ah mate that sounds epic, I'd love to have a crack at mead. I'm very new to brewing but love the process. I made a Russian Imperial stout that came in at 10%. The only problem was 23L went too quick. Next time I'd like to add coffee!

@@cluckifikno The gold medal I just received for my Eisbock at the State Fair was at least 14%. I've also thought about trying to freeze condense some mead once I understand how to produce top notch meads. I haven't yet figured out how to balance the tannins, acids, and sweetness. The fermentation of mead is pretty straight forward. I guess the other thing I need to learn more about is which yeasts work best with different meads.

@@mutantryeff That's awesome man congrats! I'd love to have your knowledge and experience. Brewing is is such fun and I love how it can be as simple or as complex as you want it to be. I started with BIAB and my first attempt was an APA. Couldn't believe how good it was. Probably no where near your level but it motivated me to move to a MLT once my bag split.

@@josephineroberts8366 The pineapple pale ale sounds refreshing at the moment. We have been hitting 100F for weeks with a few days between 115 and 118F.

I bet if you were to back sweeten (just a tad) then pasteurize, you'd get some of that pineapple back. Also....who's that guy in the second half of the video tasting your beer? 😉

The next time you brew the Pineapple Pale Ale, use BRU1 hops. Also, do not add them as a boil/bitterness addition, use them as whirlpool additions for 30 minutes. Cool the wort down below 160 degrees F. See how that works for you.
