핑크 글레이즈를 부어 반짝반짝 빛나는 복숭아 더블 프로마쥬 치즈케이크를 만들었어요~
아래 층은 크림치즈로 반죽해 케이크를 굽고 위에는 마스카포네 치즈 반죽을 굳혀 2가지 치즈케이크를 한번에 즐길 수 있답니다~
더블 프로마쥬 치즈케이크는 겉면에 제누와즈 가루를 묻혀 마무리하는데 이번에는 글레이즈를 부어 마무리했더니 사랑스러운 느낌이 나네요~
복숭아 과육과 복숭아 시럽이 들어가서 복숭아 향이 향긋하게 나니 더 맛있더라구요~

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
복숭아 2개
물 150g
설탕 100g
레몬즙 5g
크림치즈 220g
설탕 30g
달걀 1개
박력분 10g
바닐라익스트랙 2g
레몬즙 3g
복숭아 시럽 30g
생크림 50g
식용색소
스펀지 케이크 시트 1장
마스카포네 치즈 180g
설탕 20g
바닐라익스트랙 2g
복숭아 시럽 30g
젤라틴 4g
50% 정도 휘핑한 생크림 150g
설탕 110g
물 55g
물엿 110g
화이트 커버춰 초콜릿 130g
젤라틴 9g
연유 35g
복숭아시럽 75g
식용색소
▶레시피
1. 복숭아의 껍질을 벗기고 자른 뒤 껍질과 과육을 냄비에 넣고 물, 설탕을 넣고 복숭아가 살짝 물렁해질 때까지 끓인다.
2. 레몬즙을 넣고 섞은 뒤 체에 걸러 시럽과 과육을 분리하고 식힌다.
3. 크림치즈를 부드럽게 풀고 설탕을 넣고 섞고 달걀을 넣고 섞은 뒤 박력분을 체 쳐 넣고 섞는다.
4. 바닐라익스트랙, 레몬즙, 복숭아시럽을 넣고 섞고 생크림과 식용색소를 넣고 섞는다.
5. 15cm 틀에 테프론 시트를 두르고 스펀지케이크 1장을 바닥에 깔고 반죽을 부은 뒤 140도 예열한 오븐에서 35분 정도 굽고 틀 채 식힌다.
6. 마스카포네 치즈에 설탕을 넣고 섞은 뒤 바닐라익스트랙과 복숭아 시럽을 넣고 섞는다.
7. 찬물에 10분 정도 불리고 물기를 제거한 뒤 전자레인지에 10초 정도 돌려 완전히 녹인 젤라틴을 넣고 섞고 묽게 휘핑한 생크림을 넣고 섞는다.
8. 식힌 치즈케이크 위에 졸인 복숭아 과육을 올리고 마스카포네 치즈 반죽을 붓고 평평히 한 뒤 냉동실에서 2시간 정도 굳힌다.
9. 냄비에 물, 설탕, 물엿을 넣고 103도 정도가 될 때까지 끓인 뒤 화이트 커버춰 초콜릿에 부어 섞는다.
10. 찬물에 10분 정도 불린 젤라틴의 물기를 제거해 넣고 섞고 연유와 복숭아 시럽을 넣고 섞은 뒤 식용색소로 색을 낸다.
11. 체에 거르고 온도를 27도 정도로 식힌 뒤 틀에서 꺼낸 케이크에 부어 코팅한다.

50g Heavy cream
Food coloring
1 Sponge cake sheet
180g Mascarpone cheese
20g Sugar
2g Vanilla extract
30g Peach syrup
4g Gelatin
150g Whipped heavy cream (whipped up 50%)
110g Sugar
55g Water
110g Starch syrup
130g White couverture chocolate
9g Gelatin
35g Condensed milk
75g Peach syrup
Food coloring

The reason her peaches are pink is because they’re “white peaches” as opposed to the “yellow peach” we might be thinking of. White peaches are sweeter even when firm, (the peaches in the video are much firmer than a ripe yellow peach would be). White peaches have more of a floral note to the taste.

@@lizabelaart Try flat peaches, the flesh of the ones she is using and its texture look similar enough, and they are paler than the standard round peaches available in Europe. Anyway, when I get round to making this someday that's what I will use.

Its winter now in New Zealand and its no white peach. So i made it with canned yellow peaches. I used yellow colouring instead. Its Still really yummy. My whole family loves it. Will make it again next month for my mother in laws birthday, she loves it too :). Its easy to make and thanks for your sharing.
