Dang it woman, you're making me crave my Yaya's cooking and she's gone. She was a wonderful Greek cook. She and my populi owned and operated a small Greek restaurant in Chicago as first generation Greek immigrants. The woman had some knowledge. Unfortunately, I was too young during her best cooking years to learn her many secrets except for some basic recipes. That's why I really enjoy learning recipes from you. Feel free to leave it out and use vanilla and orange instead. Orange blossom water works too.

Think I had something similiar to these in Turkey, they were savoury and the filling was a green paste which I now realise must have been pistachio mixed with something else (maybe meat?). It was such a long time ago I can't remember much of the details except that they were extremely moreish. May just try this with the pistachios only to see how close they are to those that I had.

Great video. However, I am surprised to see how many flavors you added to your syrup, while only one of them would be enough, or it could be done without any flavor too. But, I can understand the reason for the need of an extra flavor, when you use a pistachio with weak flavor.
