I made this pesto to go with Salmon and asparagus for dinner. It was fantastic! Thank you!

Oh wow I’ll have to try that…salmon and asparagus is one of my easy go-to meals during the week but I’ve never thought to pair it with this!

My kids lived it Sicily for a few years and fell in love with Pistachio Pasta - so we used your recipe to help recreate it. (Though added more oil. ) Fry up then chop a pound of bacon, make a bechamel and add to the bacon grease still in the pan. Once bubbly add in the pesto and bacon. Mix. Stir in already cooked bow tie pasta, top with ground pistachios when serving.

Oh wow that sounds good. I have a video for Sicilian pasta you might also like, it is quite a bit different from your variation which sounds delicious as well!

Both options are great! I just usually have pistachios on hand but pine nuts are good too!

Pine nuts are great too but you can use pistachios or walnuts or almonds too!

Home made is so much better than canned pesto, and like you said here Eric, it is so easy to make. I'm with you on the pistachios mate!

Pine nuts are good too but I just love pistachios!

Adding the basil last will help to keep them more vibrant green. Also you can add an ice cube just to keep the temperature in check.

If anyone wants to try a more aromatic and flavorful type of pesto, try a different kind of basil. I use Thai basil, definitely a stronger basil flavor.

I want to see the next dish. 🙋🏻‍♂️ Hi Eric, great looking Pesto. I always make mine with pine nuts, that’s how I was taught. I was wondering tho, you said you like the flavor the pistachios give it, how much of a difference in the taste is there? I mean I love pistachios so that’s not an issue, but does it alter the taste quite a bit? Thank You 😊

Overall it is a subtle change with the pistachios instead of the pine nuts, the basil and parmigiano reggiano are still the main flavors. So changing the nuts is more of just some experimentation but it's all good!

Oh yes, you can definitely customize this with other flavors like balsamic, that sounds really good.

Like a moron I was SO excited for my recipe but started freaking out because it called for 'shelled pestachios' so I had a hard decision to make with no help from Google. I chose to put 1/3 cup of raw 'shlled' pestachios in my blender. GOD! IT WAS SO INEDIBLE! I wasted $$$ time and had to throw it away (hard sharp shells could be really dangerous!) I hope this is the last mistake I make! But glad I made a mistake.

Yes be sure to remove the shells before blending the pistachios!
