My kids lived it Sicily for a few years and fell in love with Pistachio Pasta - so we used your recipe to help recreate it. (Though added more oil. ) Fry up then chop a pound of bacon, make a bechamel and add to the bacon grease still in the pan. Once bubbly add in the pesto and bacon. Mix. Stir in already cooked bow tie pasta, top with ground pistachios when serving.

Adding the basil last will help to keep them more vibrant green. Also you can add an ice cube just to keep the temperature in check.

If anyone wants to try a more aromatic and flavorful type of pesto, try a different kind of basil. I use Thai basil, definitely a stronger basil flavor.

I was wondering tho, you said you like the flavor the pistachios give it, how much of a difference in the taste is there? Overall it is a subtle change with the pistachios instead of the pine nuts, the basil and parmigiano reggiano are still the main flavors. So changing the nuts is more of just some experimentation but it's all good!

Like a moron I was SO excited for my recipe but started freaking out because it called for 'shelled pestachios' so I had a hard decision to make with no help from Google. I chose to put 1/3 cup of raw 'shlled' pestachios in my blender. GOD! IT WAS SO INEDIBLE! I wasted $$$ time and had to throw it away (hard sharp shells could be really dangerous!) I hope this is the last mistake I make! But glad I made a mistake.

Yes be sure to remove the shells before blending the pistachios!
