Great video I'm definitely ordering some of the pit barrel rub. Enjoyed seeing you loosen up and cut-up. It's not that you don't. But you could tell this was much more at ease doing it. Hope you and Abby have a wonderful and safe trip.

Something to think about with chicken. The 160~165 "rule" is based on "instantaneous" kill of the bacteria. I regularly smoke chicken to 150F, as long as it sits at that temp for a few minutes. The FDA has published tables about how long at temp to get the proper bacteria kill rate. Talk about a game changer...This is a bigger deal with the smoker because I've seen it take 20+ minutes to go from 150F to 160F, when I found those tables I was "OMG"...and the food quality skyrocketed. :) Again, time AT temp is the key. 150F Held for 3 minutes has the same lethality rate for the bacteria as 160 does in 15 seconds.

I'm a little surprised to see you resting your left hand on that table and than handling the food. Oh well, I guess the heat will kill off any bugs. Maybe you should bring along a roll of butcher paper to cover your prep surface with.
