In Indonesia, every region has their own local kecap manis. Usually they prefer their own local kecap rather than the national brand such as abc and bango. It suited the local tastebud more. For instance, in Solo we prefer Lombok Gandaria more due to its thick and sweet taste, while in Tangerang they favor kecap SH more which not as thick as bango but saltier yet has a hint of spice in it. Some kecap manis even made for specific dishes such as kecap matahari for nasi lengko in Cirebon, or kecap korma for madurese satay. But ngl national brand still has the safest tastenote that can fit most of Indonesian palate.

Indonesian recipes are often extra tasty and sweet because they're also used to flavour the rice that you're supposed to be eating with. The rice steals the flavour a bit so you'll get a more balanced overall profile then.

ABC brand kecap manis (sweet soy sauce) used to be popular before beaten by Bango brand. When I was little kid in 1990s, nobody in Makassar bought Bango brand kecap manis, almost every household bought ABC brand instead. I was born and raised in Makassar (the city where Konro is originated), but moved to Jakarta in 1999. Bango brand become popular after heavily advertised by Unilever in early 2000s, and gradually become market leader and beat ABC brand popularity. So, for Konro Bakar, ABC brand is actually more authentic than Bango brand especially if you wanted to create vintage Indonesian taste from 1990s.

The Sambal that you used to grilled meat is different. Usually we use only a mix of shallots, sweet soy sauce, chilli, a bit of salt, and dont cook it, the raw taste of it is enchance the grilled sauce and peanuts sauce.

In Indonesian traditional market, they sell packet of bumbu depending of quantity /Kilogram you need to cook and what kind recipe of cook you want. Like rendang, gulai or condro they have own packet. Or different recipe every sambal, they pack with mix material

as an indonesian, i approve this. i rate this 9.5/10. tiny bit correction though: we Indonesians don't always like out things sweet. but we ABSOLUTELY love our things spicy. both literally (abundance of spice and seasoning) and/or figuratively (abundance of chili).... depending where the cuisine comes from (Indonesia is a big country after all).

If this is supposed to be _konro_ then it’s missing some of the most important ingredients like _Pangium edule_ for the soup and tamarind for the sauce, among others. Also, that’s probably a tad too much _kecap manis_ and sugar. 😅 This is a Makassarese dish, not a Javanese one. You can call this _iga bakar_ but _konro_ it is not. in original recipe they use ground peanuts, not cashew. palm oil , not peanuts oil. Improvisation sometimes good, but never use olive oil or fish sauce for bumbu.

I had never heard of that brand, but this is the second time this week I heard it mentioned. First on the KZbin channel of Jop van der Bijl and now on yours: ABC ketjap. If I understand correctly, that must be the real deal. I normally use A Trade Mark ketjap, which I absolutely love. But I might give this brand a try.

You have to Try Kecap Bango, that's the OG of kecap in Indonesia.. It's a hundred year old brand, and it's a one product brand, even though it's been acquired by Unilever in 1992, it remains the go to kecap in Indonesian cuisine.. 5:01 Peanut souce no need too soft when blending, half soft is more taste like raw traditional blanding, but traditional smashing penut souce more smells good reather then process with blander mechine, traditional way with smashing peanut on iron jar (like a wizard in the movie) or grinding on the stone they call it stone as Ulekan sambal. The taste is so different because peanut oil come out in the smashing or grinding process, the result natural sweat, not dry like blander machine process

This is not a criticism...but U didn't add one of the most essential "Bumbu" ingredient for Konro recipe, namely KLUWEK, I don't know the name in English...but in latin called Pangium Edule, but U can Hack That by using Instant RAWON Paste Seasoning, coz it contains KLUWEK in it..... once again, this is not a criticism, considering that finding ingredients for cooking Indonesian dishes is quite difficult to find in western countries...

I just commented the same thing! This is a good _iga bakar_ but it’s not _konro_ for sure. I think the Dutch have a certain idea of what Indonesian cuisine is, but it’s actually an opinion formed from the few Javanese dishes that were brought over there during the colonization era. This is why they don’t understand that this is a Makassarese dish, it doesn’t need to be sweet and it has different kinds of _bumbu_ to make.

Yeah, and isn't that it's difficult to process kluwuk? To turn it into a proper seasoning, coz I once watch a video about processing kluwuk into seasoning its hard and they say that without proper ways it could be poisonous?Indonesian too here, with no knowledge of cooking 😅
