loving the more masterbuilt content. i only heard about them ~1 year ago from your channel! before that i was almost about to buy a traeger and just learn to live with the fact they cant really sear. but the masterbuilt is a godsend. i love using briquettes or lump and actual smoke wood vs pellets

Funny thing is, when I was a kid in SoCal, it got cold and rainy too, sometimes even flashfloods from so much rain. There is a chain of Split Pea Soup restaurants called ANDERSEN'S, such good memories going to Torrey Pines to see the waves crash, then having hot soup.

I'm glad you are using the new masterbuilt, I've had a couple of their 40" Electrics and have been wondering how their charcoal one is glad to see it handles lump charcoal and not just briquettes.

@@anonymousSWE whiskey, I believe, is derived from an old Irish term that loosely means 'water of life' and is used to describe Irish and American whiskies. Whisky is the right word for Scottish whiskies, sometimes called Scotch outside of the UK. I am not 100% on my information here but happy to learn and/or share the love.

I’ve made bacon plenty of times, I never had a vacuum sealer when I did. I have bought one since the last time I made bacon and this video is really getting me excited to make bacon again!

Whiskey bacon mmm, that sounds so delicious. I got to try that. Next time use a proper bag and draw vacuum. You might be surprised by the result if you marinate under vacuum.

Would you like to test it with the dry aged project in your dry age cabinet but with the same recipe and techniques? Would it be amazing for 14 days dry aged bacon tho

Dry aging to remove moisture then brining to remove even more then smoking, which is normally done cold to only impart flavor not cook it, is either going to be awesome or shoe leather. I vote to try it. I am now extremely curious it never occurred to me to brine something dry aged.

SUGGESTION - Can you look into typical non-grilled items on the grill? I have had good luck with Carnitas started on the grill with smoke, and finished in the pressure cooker. Can you look into some items like texas chili, non-texas chili, Chili Verde and similar items. Think of things that can be a hybrid of grill and non-grill. Also - please go into the bacon/sauerkraut. My german heritage has sauerkraut with caraway (not a fan) - but I am sure that bacon can make anything better. EDIT - I also have done a nice smoked meatloaf - amazing stuff!!

I need to teach you how to make salt cured smoked bacon and Virginia ham. It takes about 2 months for the bacon, but a great Virginia ham hangs for 2 yrs.

I believe it's very similar to what the States call apple butter. It's basically extremely concentrated apple juice.

I have never heard of apple spread. I have heard of (and made) apple preserves, jelly, and butter (all of which may be spread.) So, what do you actually mean by apple "spread?" For recipes like this, I have found that using the raw ingredients used to make the apple "spread" butter, instead of using the already processed apple "spread" butter, provides far better results.

“Apple spread” is apple syrup, only the syrup is really thick. Thats why you need to “spread” it with a knife. They use it often on a slice of bread or on pancakes in the Netherlands

Since I am a native Texan, I use ONLY mesquite wood when smoking and natural oak charcoal with mesquite wood chips, NEVER briquettes, when grilling. Mesquite wood is abundant and free in the American southwest, especially in Texas and creates an excellent taste. Mesquite is not indigenous to the United States, as it was brought to the North American continent by Spanish explorers in their horse feed and dispersed throughout the continent by the horses defecation. More than you might have wanted to know. LOL! Have you tried mesquite? If so, what did you think about its flavor?

Nooooo. In the EU colorozo salt is 0.6% nitrite. The Pitmaster even uses too much colorozo salt in this recipe according to EU guidelines. It should be about 40% EU colorozo salt and 60% regular salt. So he's using a little over 2 times too much colorozo salt in this video.

No need to use sodium nitrate for low volume short shelf life curing, sodium chloride is much safer. Though nitrates are healthy, after curing and applying heat it converts to a nitrosamine which is a leading cause of bowel cancer (recognised by the WHO at the same confidence as smoking and asbestos). Nitrate was used years ago to prevent Clostridium botulinum, however the maximum amount as prescribed by the FDA does not affect growth of Clostridium botulinum, it does however keep the meat pink and speeds up curing. The EU is pressing heavy to ban all nitrates in meat, having already been adopted by a number of EU countries. Also, the quality of the meat processing and refrigeration has changed dramatically since nitrates were first used. I’ve made 100s kg of bacon, salt, pepper and various flavours (maple or cacao are good) is all that is needed, without the associated risk,.

It's called Kicap Manis. You Will be able to find it in an Asian grocer. It is a thickened and slightly sweet type of soy sauce.

Homemade bacon is the best. Now try dry aging a whole smoked pork belly. I’ve done it with the dry aging bags and it is excellent! Dry aged bacon mmmmmm.
