Munchies

3 жыл бұрын

Eleodoro Lopez is the chef and owner of Elio’s Wood Fire Pizza, a Neapolitan-style pizza food truck that serves gourmet wood-fired pies on the streets of Los Angeles. In a street food market saturated by tacos, Eleodoro had the idea to stand out by serving the food he knows well, based on his background working in Italian fine dining and bakeries. Eleodoro, who comes from Guatemala and began his culinary career in Mexico, made his way to California to find a better life for himself and his family. He began to find success with his wood-fired street food pizzas, using only the finest Italian ingredients like San Marzano tomatoes and 00 flour. He serves his pies with arugula, prosciutto, burrata, pepperoni, calabrian chilies, and more.

I'm from Napoli, and I can say that he made something really cool, he tried to make Neapolitan pizza and he almost made it. I'm saying almost cause there is something that in America you can't get. Like real Mozzarella, if you come to Napoli you need to try mozzarella and you will understand that the cheese you call mozzarella in the US is not mozzarella. Cool, The fact that he uses San Marzano Tomato Sauce. Great job mate

Costco sells imported mozzarella di bufala campana, shipped fresh weekly. My local Italian market sells imported 00 flour, D.O.P. certified San Marzano tomatoes, and fresh baker’s yeast made daily. For Americans who live near international hubs, the good stuff is there if you know where to look.

I try, emphasis on try, to make pizzas. My kids give me the benefit of the doubt sometimes when I make them. Other times they don't eat it. My man right here is killing it with his mad skills. Lets not forget that the backbone of every fancy pants restaurant that charges mad money for a food, are guys like this. No English. No papers. No experience. Fast learners. Hard workers. Say what you want but immigrants, and you know you will. But this guy is making it on his own, with the skills that he learned and were under valued and under appreciated. Enjoy the fact that he's making it as legit as possible. If you see any old world pizzeria, you know they do it like this. Chapin! Echele ganas patojo. No se deje porque ya la hizo. Solo para arriba ahora.
