Cento is my go to brand....I buy their crushed tomatoes....beautiful fresh taste! I purchased a few cans of Bianco Dinapoli crushed tomatoes....I think the Cento are much better taste and they're less expensive so its a win win in my opinion!

Hi there, is there an ideal temperature for using a Steel on Kamado Joe, Big Green Egg type grill? Also any advice on the position of the steel in one of these egg would be great.

Great question. Ideally i'd be starting around 400 F. Any hotter and you will be scorching your bottoms... You can place your Steel directly on the grates.

I quit using a pizza peel. I really think it’s a gimmick. You get flour or cornmeal everywhere. They aren’t the easiest thing to clean. Even seasoned pros end up getting the dough stuck every once in a while. And the whole “launch” thing just annoys me. I worked in a pizzeria for years and nobody ever said they were “launching” a pizza. I switched to parchment paper. Stretch the dough on the parchment, slide it on a round pizza pan, slide the pizza off the pan onto the steel in the oven and within 10 seconds the dough sets and you can remove the paper. No mess, no burnt raw flour, no cornmeal everywhere, no peel to clean. I’ll never go back to using one. My $150 GI metal just collects dust now.

I agree, parchment is great. The only draw back is you will not be able to use the broiler until the parchment is removed. But it does make for a nice fast clean uip...

I also use my peel to slice and serve. Makes a great serving platter.

I could never get a thin crust to crisp up on the bottom without the steel. Got a steel and the thin crust come out phenomenal

That metal peel is the problem. Get a wooden one. Season it, a light sprinkle of cornmeal or semolina, then you're golden. I only use a metal one for pulling pizza or bread out of my oven.

I do this too. I remove the parchment as quickly as possible - have ruined too many pizzas at the launch!
