I did commercial pest control for 5 years in Southern California and I can tell you that with regards to rodent control the biggest issue is exclusion, i.e. keeping the rodents from coming inside. I had a lot of issues with restaurants, bakeries and stores in older strip malls or store fronts. As a tenant a the restaurant can only do so much in that regard, if the structure is compromised because of foundational cracks/openings or broken missing vents then the owner has to step up and address that. I had instances where the business needed the work done, but the owner denied permission for us to do the exclusion work and decided to fix it themselves or look for a cheaper option and the entire time the business is basically helpless because while the building owner looks for a cheaper option or forgoes the work altogether, the business is on the health inspector's radar and racking up violations and fines. There really isn't a reason for a restaurant to have an active rodent infestation unless the building or it's screens/doorways/windows are compromised and that isn't in the purview of the tenant to fix.

Almost all restaurants/ big chain corporations have some sort of pest control. Having a bait box in front of a restaurant doesn’t mean they are dirty necessarily more so means they don’t want rodents to start coming. Rodents are everywhere especially if you have a store by a body of water

I feel bad for the guy because his problem appears to be the building and storage shed not being properly rodent proofed, it's a structural issue more than a cleanliness one (though, you can clean throughout the day and set traps, but that doesn't solve the problem of rodents entering the structure), the guy has flour and other foodstuffs that rodents are attracted to and if the building is compromised then other than clean up after the fact, what can the owner do to remedy the problem? The building owner has to take care of those issues, as pest control services can only set traps, and bait stations and monitor, the owner has to either authorize repair to the building from an exclusion provider or bring it up to code himself.

The cleanest restaurants are usually those where you can see the cooking/prep surfaces (waffle house, huddle house etc...) If the kitchen is walled off, chances are its nasty back there as the cooks dont have to keep it clean all day since the customers don't see it

I was a cook for about 1 year at a food facility, those kitchens are a horror story. For the pasta or any sauces that required water, the managers had the cooks use tap water from the sink. The roaches weren't normal ones, they were monsters.
