You could leave it out but it does add a complexity of flavor. Any Asian market or our amazon link has it easily available.

It's much much more flavorful than the browning sauce. The browning is really more for color.

Can you freeze the seitan before or after you boil it?

Either actually, but after simmering is likely better. Also... don't boil it. It will just puff up and get bready.
