I usually use a slightly soft plantain so that when I fry it it is a bit brown in color. I slice my veggies a bit bigger( spiral ) so we pick veggies with every spoonful. Well done and thank you so much.

I've had a kind of fried plantain called tostones. You cut the plantain into ~1" lengths, fry them the first time to soften, then you take them out and squash them flat into small discs and fry them again. So good dipped into mango chutney (that's not traditional, but tasty, so I don't care). :-D
