What you just made is called Kilju. Really popular in the Finnish community. Easily enough to make. I would use a better wine yeast next time. I use Amerotti all natural extract to make all types of soda syrups. Use those to flavor and keg.

I do this all the time. When it’s done I add it to ice and lemon juice it’s very good. (Hard lemonade) Also you can add it to a seltzer (hard seltzer) and a soft drink or lemonade.

Along with half a bottle of maple syrup & half a pack of yeast... Within the first 12 hours it has lifted up like orange foam. Is this how it should look on the first day?

I watched your first video from 5 years ago and didnt realise it wasnt as simple as add more sugar and yeast and the abv will be higher, i started a homebrew and added enough sugar so it would come out at around 25% and the gravity at the start is 1.180, what do i do

You probably need to dilute a little bit. the low 20's% is about as high as you can get with just fermentation alone. You will also need some turbo yeast or a high gravity yeast.

G'day, Great video! I recently made a hard lemonade and ginger beer and almost ready to bottle them. Can you pls advise what sweetener I could use to back sweeten them to add sweetness without increasing the ABV and over carbonating them and creating bombs? I will be priming the bottles to carbonate them. Also, to kill off the yeast to stop the carbonation process and preventing exploding bottles, do you recommend pasteurising the bottles? TIA!

I've never done the pasteurization thing, so I can't talk about that. You can use artificial sweeteners if you are worried about bottle bombs. Cane sugar usually works fine for priming, just don't leave out at room temperature too long.

My experience of brewing sugar water. I used old yeast. I thought it did not work. So I just left it and stayed in a 2 liter soda bottle for about 2 months. I finally got the courage to crack it open to taste. And to my surprise, it had a nice strawberry flavor. Gave me a good buzz leaving me wanting more lol. I forgot to mention that the sugar wash would release a few carbonation bubbles like a week into fermentation.

10-12 grams of yeast should do. Mid 60's to Mid 70's F is about right. No need to inflate the balloon. Let it go for 10 days to two weeks.

Very informative. If you were to do this with molasses and sugar combo wouldn't you get the " mash" for rum ? Also old Mr Johnson used a rubber stopper with a hole in it that he put a small hose into and ran the end of the hose into a glass of water to indicate when fermentation was done. Just FYI the best homemade wine I've had was made with wild plums and blackberry. Do you have any suggestions as to what kind of yeast to use and where to order it from? The plum trees are in bloom now and the blackberry will follow. There should be a time in June when I can get both at the same time from roadside patches both here and down in love county. Are the yeasts that you order more capable of producing a better tasting wine than bread yeast? How did you get so knowledgeable in this subject? And I really appreciate your feedback. Would love to drink a few with you sometime. Cheers

Molasses and sugar would make rum if you had a still. A good wine or champagne yeast will give you great results. they give you a cleaner fermentation and higher ABV. I've been bartending for about 30 years and homebrewing for about 20.

regarding the heating the water... 30 min at 140 or 30 seconds at 185 to pasteurize. Although the amount of time it takes to get there and the amount of time it takes to cool down (hopefully covered) would let a 5-10 minute dwell or just a climb to 155 and cut the heat do as much as you'd almost ever need.

Yeast energizer AKA yeast nutrient is used to give yeast the nutrition it needs to convert the sugars into alcohol. They are different and yeast nutrient isn't always needed.

Usually I find that distillers yeast performs way better, but you gotta keep it warm (I use heat blankets and electric heaters). Keeping it in the dark away from fluorescent lighting helps, too. I don't use yeast nutrient, but if you want you can boil some blended raisins and pour that into the mix for nutrient. DO NOT USE TAP WATER. It has chlorine and chlorimide and will stall the fermentation. It needs to be purified or distilled water. Easy to make a water distiller with a lidded pot. Attach a bulkhead to the lid, run a small copper tube into a coil, submerge the coil in a bucket of water, with the output of the coil at the bottom side of the bucket for output. Distilled water is pretty expensive, about 2.50 per gallon, but you can ferment in the HDPE jug it comes in.

I use 10%/11%/15% juices all the time for this, and they turn out great! Very strong alcohol flavor after tons of bubbles. The trick is to add more yeast. You know the preservatives and whatever are going to give the yeast a hard time, but when you put 5 grams of yeast instead of 2-3 grams, they take over the fermentation process beautifully. Be careful, you may get too much fermentation and end up with an over spill.

I was walking through Walmart and decided to try this since you can't buy alcohol with food stamps but you can buy the ingredients. I got 4 pounds of sugar, a gallon of water, I already had a half gallon of water in a gallon jug, 1 1/2 gallons of 100% Orange juice, and a 3 pack of Fleischmans original bread yeast. I did not use heat, in fact the liquids were cold at the time I mixed them. I first dissolved the sugar into the half gallon of water in the 1 gallon jug and topped it off with more water. Once fully dissolved, I added 1 yeast packet to the sugar water turning the sealed jug upside down like an hourglass to help the yeast dissolve as it wants to float in cold water. Once fully dissolved, I didn't have a big vessel so I used the 3 gallon jugs that I now had and an empty 2 liter bottle. I used all 4 containers to mix all of the Ingredients thoroughly until I had 3 gallon jugs filled and I recycled the empty 2 liter. I split the other 2 yeast packets into all 3 gallon jugs of half diluted OJ with 4 lbs cane sugar dissolved into it. I'm letting the sun heat up the liquid so the yeast starts working. I will manually burp the CO2 as it ferments because I can. I will let you know what happens in 10 days.

If its something you're just wondering if is for you then you really don't need all that much to get started. Hydrometers and stuff can come later, in the meantime just buy the yeast and follow a basic apple juice cider recipe or a wine and if its something you find yourself interested in after it's done fermenting you can buy the extras.

I make sugar water alcohol once the fermentation is complete I add cordial to flavour then also dissolve more sugar in water and add in stages until desired sweetness is achieved. I make 25 ltr batchs using 5kg cane sugar I also buy bread yeast which I boil and kill and add to the fermentation this adds nutrients for the yeast I then use turbo yeast which takes anything from 3 days to a week

Thanks for a helpful video on this topic. It is always more satisfying to sample one's own brew rather than merely always have the commercial products. I have recently attempted brewing a batch from apple juice and trying it a little differently this time. I have used only half a cup of brown sugar and a table spoon of bakers yeast in two litres of 100% apple juice. It is bubbling away quite quickly with little sludge developing on the top. I am using a lose cap rather than a bung. It may develop a little less alcohol than usual but I hope to reduce the carbs as much as possible. I am not sure of this batch will complete all of it's possible fermenting sooner than usual due to a little less sugar added. Otherwise I usually let it go for ten days before decanting. Anyways time will have to tell, I have not used brown sugar before only refined, and usually one full cup. Thanks again for enjoyable video.

Hey Platt, was looking into distilling my homebrew (for a higher percentage and less yeast flavor). And was just wondering if i should be worried about foreshots. heads, hearts and tails. Or if that wouldn't matter if i was to just distill this.

Just be careful of the laws where you live as in many places it's legal to ferment alcohol but it's illegal to distill it without a license.

Hey platt if i made this with cinnamon, sugar, water and bread yeast should i be worried about methanol concentration? If i didnt distill it?

No. Methanol levels cannot be high by fermentation alone. Methanol levels will only get to dangerous levels when you distill the drink. Beer, wine and liquor in stores also have methanol, but the % is so low that it isn't dangerous at all so you're good.

Decent, but what about the sediment at the bottom after brewing? I thought you would filter it out before adding the Kool Aid?

Not sure this would work in a cocktail but if you wanted to add juice or a flavored syrup, that would probably work.

I'm just wondering, if I could use sugar, water, yeast AND fresh squeezed manderin oranges or pink grapefruit, ect.?? Y'all have any thoughts? EDIT: Or what about home canned, fruit jelly? My thinking is because of the simple sugars and no preservatives...

Add citrus juice should work just fine. If it has no preservatives, I don't see why the jelly wouldn't work. Actually, that seems like a good idea.

What is the average percentage of alcohol for letting it ferment for around a week? How about two?

Something to note is the type of yeast you add determines how much alcohol youd get, so if you add bakers yeast you'd get ~8% alc while if you add wine yeast youll get ~18% alc

For the most part that is true, there are other factors like the amount of sugar that also affect the ABV.

Don't tighten the lid. The CO2 needs to escape and could explode the bottle.

I plan to make a batch of this myself, but this is the first time I have ever done it. I don’t have a hydrometer, so it’s probably gonna be a little difficult for me to realize if the fermentation is stuck or moving properly. Are there any tips you can give to help understand what to look for in the process? Also should I add nutrient at the beginning to help prevent it from stopping

Definitely add yeast nutrient in the beginning. Basically, you just want to see bubbles rising in your liquid to let you know that it is working.

What about using corn syrup or Beano with your regular table sugar? With or with yeast nutrient? Or using lalvin 1118?

Corn Syrup will work. No need for Beano because the sugars are already broken down for the yeast. You will want to use yeast nutrient. Lavlin yeast will work just fine.

As long as you washed them, you should be Ok. If you want to infuse fruit, I would do it after fermentation.

Thank you for the info. I’d like to make a good tasting wine. Altho distilling is my goal whiskey moonshine. I was thinking also of peach brandy . I wish I had friends in the area that also make booze. I don’t drink myself except a small glass at night with dinner . So a elegant wine or whisky is my goal.

Try my recipe. boil in 1/2 gal water 1 bar guava 300g, 4 cups sugar, 1/2 cup candied orange zest(can make with orange peel and sugar water), 1/2 cup molasses. when cool strain.1/4 pk yeast. Air lock add to 3/4 gal bottle. add 2 cups apple juice- usually i remove from 1/2 gal apple juice for making the hard cider at same time. about 21to 25 days is ready. cold stop-fridge. Stop when at the sweetness you like. Good stuff
