DOUBT: if we have to encrypt AH. Since they are in same row we will replace them with immediate right. A's immediate right is B but H's immediate right is I/J. So what should H be replaced with only I or only J or both I/J ??

usually we omit 'j' from the grid

Any would do..ur answer will be correct in both cases..but recommend letter is "i"

what if we have to encrypt something like jimmy? and when we decrypt at the receiver end how could the receiver understand that z is the extra letter not in the original plaintext

I guess, can add x with z during pairing. So, the plain paired text would become Hexzxozx. So, the entire cipher text would be Bfyvynvy
