Playing: An interesting way to make ORIGAMI pour over with Kalita filter.

In this video, Ply takes you through how to make an ORIGAMI Pour Over with a Kalita Wave Filter, and introduces filter manipulation. By using a flat bottom filter instead of the typically used conical filter (with the ORIGAMI) and manipulating the paper, we are able to decrease the size of the bottom of the filter paper while increasing the surface area of paper touching the dripper. This will increase the flow rate of your brew.
With a faster flow rate, coffee can be ground finer, the coffee will brew faster, and the taste of the coffee will be different than what you'd normally find with a kalita wave filter.
A higher ratio of coffee:water is used to here for a balanced cup.

Great tip about just adding a few drops to get the filter to sit right. I always had issues getting Kalita filters to be consistent in my origami

You should also try only taking out the filter from the outter most layer if you haven't been doing that. This will ensure that most of your filters that you use are uniform as the ridges shape are quite different when you take from the outer layer vs the inner layer.

Do you start your timings for bloom at the beginning of pour or after done pouring?

Right at the beginning, in generally brew time is total brew time.

@@RogerLiem 14 is a good size. Even for a darker roast. I use a kalita wave stainless steel 155 dripper. Not an origami.

Could use smaller if you do more smaller pours recipe, I personally use the bigger to fill up to the top for a simple 2 pour recipe for most coffee
