It was 1:16. but for 500ml, 1.16.7 would probably better. Try 30g coffee to 500ml water.

Around 2-3 weeks off roast, or 6 days for Ikawa roast

Really depend on the coffee. In that competition, it was 5 days off roast. Most other coffee will be around 2 weeks.

I couldn't stand that holder. My dripper never sat flush which caused uneven extractions. I just bought the plastic one with the groves so the dripper sits flush

Relax it's fine. This is a competition recipe so he is looking for a juicer cup for the judges. Temperature drop will result in more juiceness and acidity.
