Zach, I think instead of running away from wild pokemon it is necessary to battle and catch some so you and your pokemon can get stronger quicker, I've done the same thing and it's totally worth it. And I also forgot to mention it is better to battle wild pokemon that are below your pokemon level, higher level pokemon will give a boost but it means buying lots of revives. Running away from pokemon won't make your pokemon stronger.

Keep fletchling all the way through it's final evo is talonflame which is a fire flying which will be super good for future gyms.

For someone who dislikes/ doesn't prefer to do pokemon fights lol, you can use the "Let's go" mode in the overworld to basically autolevel all your pokemons without needing to get into battles. Press 'R" to send out your leading pokemon to auto fight other pokemons, just make sure the typing is right and you will level very quickly, e.g. if you see a bunch of rock type/ water type pokemons in the area, just use your cat as the lead and send him off

Also, this game is similar to Legend of Arceus in that the open-world exploration is mandatory, even though the game is like 'you can do whatever you want in whatever order'. You will have a very hard time if you just go from point A to point B to complete the story asap. You are supposed to do lots of exploration so that your mons can level up in the process, otherwise you cant catch up to the npc's levels

I looked up the level's of each strongest pokemon at each challenge. Here's an order I recommend going from lowest level to highest: 1: Bug, 2: Rock, 3: Grass, 4: Flying, 5: Steel, 6: Dark, 7: Electric, 8: Fire, 9: Water, 10: Poison, 11: Normal, 12: Ghost, 13: Ground, 14: Psychic, 15: Ice, 16: Fairy, 17: Fighting, 18: Dragon

You should keep fletching because its evolve into a fire type. But you can switch the pig to another pokemon. You need a ground type. Also, you should use your rare candies and exp candy to level up your pokemon. And if you catch pokemons, you also get exp to the whole team.

FYI, some pokemon are regional variants and are different types than their original selves. In this game, instead of your typical wooper, you've got Paldean wooper which is a poison/ground instead of a water/ground. This means that grass type would only be normally effective against it, while it may be able to bite back with a super effective poison move. Another thing to be careful about with Paldean wooper (and it's evolution "clodsire") is that it some of them have the ability "water absorb". While ground would normally be weak to water, this ability not only makes water type moves do no damage to it, but literally heals it. Also, another little tidbit: wild pokemon that have a question mark appear over their heads upon seeing you aren't hostile and will approach but not bump into you. But ones that have an exclaimation mark will actually chase and start a battle with you.
