Basanti Polao or Mishti Polao, sometimes simply known as polao in Bengal refers to a sweet, ghee-laden rice dish made from fragrant gobindabhog or kalijeera rice, cashew nuts and raisins. This is the main rice dish of choice for any special occasion. Among the side dishes served with basanti pulao, kosha mangsho [video linked below] is the most popular. Kosha mangsho and polao is a favourite combination among Bengalis. While there are many other kinds of polao, made with different types of fruits, nuts, meat or fish, this one has become the most popular, featuring prominently on the menus of Bengali specialty restaurants such as Bhojohori Manna, Kewpie's, etc.

As I have mentioned in another comment today my daughter prepared this basanti polau.. when her twin brother prepared kolkata fowl cutlet. It turned out extremely delicious. Only thing she altered is the quantity of sugar. We made it 35 gm which suits our taste.

In my life the best polao I had is made by my didun. She cooks a bit differently. I shall try this mixing the rice before hand with the spices... seems interesting. One thing you should mention in the video that by no means sugar to be added before the rice to be cooked. Even by adding a pinch of sugar the rice will take an eternity to get cooked. For beginners, its a very important information (I have suffered once, so i know 😜)

My grandmother used to make a version of this polao, using akhoni(yakhni)-r jol.She used whole spices and coriander seeds to prepare the broth and would then cook the rice in it. I also remember her air drying the rice with the turmeric powder on..though this looks equally delicious and I'd love to give it a try!

জলের পরিমাণ টাই আসল । বাকি গুলো আন্দাজ মতো দেওয়া যায়। যতটা চাল নেবেন তার দুগুন জল দেবেন। ধরুন দুই কাপ চাল নিয়েছেন আপনি তাহলে চার কাপ বা সোয়া চার কাপের মত জল নেবেন। আর সেটা গরম/ফুটন্ত জল। তাহলেই দেখবেন আপনার পোলাও পারফেক্ট ঝরঝরে হয়েছে

আরে, না না। একেবারেই কিছু মনে করিনি। এটা একদম ঠিক কথা যে আমরা সব ভিডিওতে আলাদা করে হয়তো বলি না, কিন্তু সব রান্নাই মা, মাসি, ঠাকুমা, জেঠু, মেসো বা বাড়ির অন্য লোকেদের থেকে শেখা। আমরা সেটাকেই হয়তো একটু এদিক ওদিক করে নি। ঝর্ণা ঘি সত্যিই খুব সুস্বাদু, তুলনা হয়না। আর silver play button celebration এর ভিডিও ছিল উচ্ছে আলু ভাতে। Giveaway ভিডিও এখনো তৈরি হচ্ছে। 🙂
