I am nearing my 90th birthday and grew up in Calcutta. Chinese food was one of my favourite cuisines. There were many Chinese restaurants where I lived and I particularly liked the beef chow mien which mainly consisted of chopped spring onions and bean sprouts. In 1945 it cost 4 Annas. I remember Chinatown and the posh Nanking restaurant and the smaller restaurants dotted around that were very basic but the food was brilliant. I have travelled to many places in the world (I live in London) including Singapore, Hongkong and San Francisco but no place has food to equal that available in Cal and that also includes street food.

Trying this recipe exactly to the T - made me realise everything you make on the video makes sense! The order of your preparation and the ingredients and even the measurements! I have tried your recepie many times I have eyeballed the ingredients also I have just not been ready enough every time before stir frying the noodles. But man hats off to wherever you got the inspiration to this recepie from its by far the most perfect and the veggies get crunchy and not soggy and wilted by the end of the process! Added some cucumber and onions to finish! Just like the Kolkatta Chow chow! Guys who ever is making this please watch it 10 times if needed but follow it to the bits.

What A beauty this video is! I love you have used patla chow instead of mota chow which most restaurants have started serving. And they are no match to the street chow. Kolkatar aar ak chow aache jeta chhoto belaye bondhur tiffin theke khub khetam. Aloo, peyaanj, lonka, aar deem diye chow. School a lunch time a haath diye tule khetam, thanda chow . But it used to taste divine. Akhono majhe majhe barite deem chhara banai cz family is veg. Kintu shei bondhur tiffin er chow er taste ta ashe na. Maybe deem ta missing tai, or maybe whats actually missing is the classroom, the childhood .. Loved the video!

There are literally plenty of cooking channels out here on KZbin but it will not be an exaggeration I guess if I say that Your cooking channel is probably one of the best I have come across. And why do I say so? Your presentation is so subtle and at the same time so neat. I also love the amount of research you guys put in behind any recipe. You guys are super in creating these videos no unnecessary talk and fake tasting... in Bengali no “bhaat”... but just one tip that I use while making chow mein... I boil the noodles and immediately give an ice bath or cold water bath to stop the cooking... and works for me

I just wanted to say thank you for your recipes. I had no cooking experience at all before I started watching your recipes. It was all because of you, I started cooking. The first dish I made was kosha mangsho of yours. On your advice I bought all the necessities you mentioned, and as someone who is new to cooking and doesn't know how much salt to add, your gram measurements of everything is very helpful. You introduced me to Kenji Lopez and serious eats, and I can't thank you enough for it. Now I cook 2-3 times a week and have always planned what to cook the next week be it your video or a serious eats recipe. As I said before, I can't thank you enough for this :)

Twenty years ago my father introduced me to noodle world through this dish in Calcutta. That chilli chicken was a cherry on top in the end. These were literally my most favorite items to eat, add a hot n sour soup to that, there goes my best childhood dinner.

An egg-roll wala at my locality uses meat masala. He sprinkles it while stir-frying the chowmein. I found it adds to the flavour. Chowmein mix of any brand will also do nicely. The gentle hand-tossing with oil does wonder. It never gets stuck this way. I always undercook my chowmein a tiny bit rather than trying to cook it to perfection. This way they are less breakable. Later, while stir-frying, the steam cooks it through anyway. P.S. - We sometime make Maggi the exact same way. Boiling the noodles like chowmein for two minutes only and the rest following pretty much the same recipe you showed. Only instead of the dry masalas, we use the Maggi masala. And we too like to top it with crunchy slices of onions and cucumber (sometimes with hot chanachur, but that's only me!!!) 😊

You can add diced raw mangoes in summers, keep the dices very small and it adds freshness plus give a sour burst of flavour everytime it comes under your teeths. Jhalmoori, if I am not wrong is like bhelpuri, you can also add a very little amount of a little watery red chilli garlic chutney if you like garlicky flavour. I saw a vendor in Gujarat doing this and we used to enjoy his thela's bhelpuri, his bhelpuri was very famous.
