I'm pretty sure the overall hull color was pretty consistent throughout; what changed was the amount of light they threw on that model. For the first pilot, the model was completely unlit internally, and was shot against a black background (an attempt to skip a step or two in the optical printing process; Doug Trumbull tried a more refined version of this with The Motion Picture). For the second pilot, some lights were added, mainly running lights, windows, and the dome over the hangar doors, so the studio lighting was scaled back a bit, so as not to overwhelm them (note the more dramatic shadows on the model as well; all the better to show off those lights). By the time of regular production, they've added those swirly lights in the Bussards , so the amount of studio lighting had be seriously scaled back, resulting in not only the pretty lights to be seen clearly, but for the actual hull color to be revealed as, not white as some think, but a medium battleship gray.
