When I was a little girl I spent a whole summer with my best friend’s Polish grandmother. She didn’t speak English except she sang to us all the time “My Bonny,” and she made this soup for us. I didn’t like the taste, but now beets are my favorite, and I think I better learn to make this.

in Poland we never forgot about dried marjoram and few peppercorns, it make soup taste lot better, you can put it in some cookin cotton saschet, so when it give away the taste, it wont swim around. This version we eat with polish cabbage or mushrum dumplings.

+P4n3K I don't add majoram, but peppercorns is a must indeed. Can also use strainer to filter the soup after it's ready. "Pasztecik" (a pasty with mushrooms and/or cabbage filling) is a good companion to a borscht too.

I have been looking for a recipe like this for many years. I love borscht. I've had many different styles, some we're good, some we're ok, many we're bad. I will talk about the one that changed everything. I am in Canada, near Canada's capital, Ottawa. There was a Polish restaurant here called Polonus. Everything I've had there was exquisite, but I will speak of their Borscht. When the bol was served to me, it simply looked like crystal clear purple liquid. I thought to myself, hmmm, I've never seen Borscht like this before. I was used to chunky and thick borscht. I was confused and almost brushed it off mentally. But, I love to try new things and I do try to keep an open mind. This Borscht was the best I've ever had to date. It changed my mindset on what borscht can be and should be. It's purity was it's strength. It allowed the subtle flavours to come through in a big way. I had tears in my eyes watching you prepare this, as I could see the same approach must have been used at the Polonus. Thank you!!! I will be trying my hand at this, paying meticulous attention to all the details you have so kindly shared with us! These are the secrets to happiness that absolutely cannot be lost to time, but need to be passed on from generation to generation.

I'm thinking…with the BLOOD MOON appearing tonight, and not returning for 18 years, this Polish borscht soup looks perfect to serve with our Bloody Marys! Loved your music … very calming!

More beetroots, better the soup (no upper limit really). I don't add onions and I use white vinegar or beetroot "sourdough" (basically a fermentted beetroot juice) instead of a lemon. After you add acidic ingredient (and you have to, so that borscht won't be brick-orange in cloour), you can cook it for much longer than 30 minutes, but do not boil - it should be "brewed" like a tea in a teapot on a low heat. Vegetarian version is traditional soup for a Christmass Eve.

I am half polish and have heared of this soup before. But never had it. I heared it's cold and spicy and is popularly eaten in Russia during the winter months. No offence but I don't really think this would be my favorite soup but I. Would love to try it to see if it's what I heared

I think you might be mixing this up with something else. I have eaten this in Poland. It was served warm with mushroom pierogi. It is not spicy at all

this soup isn't tasting that much for me when i made it. I have tasted the redbeet soup in a restaurant and then it tasted much stronger. ;/

NerdFag Gaming try using vegetable stock instead of water and grate the beets instead of slicing them and let it simmer for longer, that's how my mom makes it
