My first time making Polish bread. Your daughter is adorable and very helpful. I doubled the recipe and only used 1 packet Rapid Rise Yeast and instead of all-purpose flour, trying it with self-rising flour. So far, so good. Can't wait to see the final results. Thank you for the recipe. I'm with a Polish guy and I'm sure he'll love it.

Chalka is Jewish. It's from the Hebrew word Challah / Hallah which is a kind of loaf. It is said that Sefardi Jews who fled Spain brought it to the Ashkenazi Jews. Poland had the biggest and well developed Jewish community in Europe, so it ended up there. It is no coincidence that this bread is also found I other countries next to Poland (named differently like koilitsh, shtritsl, kozunak) where also big Jewish communities lived. This bread is not originally Slavic though. I know this because I'm a Soviet Jew who's ancestors all lived in the area of the Polish-Lithuanian Commonwealth untill it became Russian/USSR.

+Rozhan Sardar You can use a wooden spoon and then hands... gets sticky a bit at the beginning but gets better while kneading! You want to knead it for about 8 to 10 minutes :) If it keeps being sticky sprinkle a bit of flour, I would say tbs of flour at the time and keep kneading!

Thanks for the great recipe, I would like to try it. I do not use dry yeast, I can also use a cube yeast? If so, how much? In Poland, a yeast pack weighs 100 grams, 42 grams in Germany.

Yes of course you can use fresh yeast, the conversion is simple: 10g of fresh yeast = 1 teaspoon of dry yeast. Add it to milk with tbs of sugar to melt it first :) I hope that helps! Ania

no reason really, it is a sweet bread but a pinch of salt would be perfectly fine. the recipe calls for 0.7 lbs of flour (2 and 1/2 cups)

I just tried your recipe but the dough ended up being too tough. I used a kitchen aid 6 qt mixer at speed 2. Any suggestion? Maybe I should have only used two cups of flour?

Next time add 2 cups and then add gradually more if you need (you don't want the dough to be sticky). Different flour may absorb more liquid and then you need less of it. Happy New Year!

Your oven's thermostat may run a little cool. Check with an oven thermometer. You may need to increase the temperature setting to compensate.

This isn't Polish bread. It`s actually Jewish and it`s called Challah, although it`s very popular in Poland since there was a massive Jewish population in PL before WWII. Another common misconception is that Babka cake is Polish. It`s not, it`s also Jewish and it`s also popular in Poland, especialy during Easter. Nice video though ;)

Jewish Polish and Catholic Polish named the same dish different. Ania must be Catholic because she ate pork in one video. My partner is Catholic Polish, Chalka or Challah is the same for us, for them the pronunciation vary if Jewish or Catholic
