Polish Carpathian Cake 波蘭蛋糕 |Apron
Cake 蛋糕
Water 清水 100ml
Unsalted butter 無鹽奶油 40g / 3Tbsp
Sea salt 海鹽 1.5g / 1/4tsp
Plain flour 中筋面粉 70g / 1/2cup
Whole egg 全蛋 2(55g+- per egg)
Pan Size 圆模 15cm
Bake at 200°C / 390°F for 15-17 minutes
摄氏200 / 华氏390 烘烤 15-17分钟
Cream filling 奶油餡
Whole egg 全蛋 1(55g+- per egg)
Caster sugar 细砂糖 60g / 1/4cup
Cornstarch 玉米澱粉 25g / 1/4cup
Fresh milk 鮮奶 300ml

It's nice to see Polish cake being done on foreign channel! If you make the cake on the larger, rectangular baking tray, you will have better "mountain-like" effect (that's what it's all about, the dough after baking should look like Carpathian Mountains) ;) Anyway, the cake looks really good! 👍👍

I made this! Everything came together very quickly and easily. This was probably the best choux I've tasted in a long while. The cream was delicious. Between two people, we ate the whole thing in a day, it was that good! I won't make it again for any less than four people. Thank you for the great recipe! Thank you, people of Poland, for the Karpatka.

I'm from Poland and I'm freaking love "Karpatka". My mom sometimes add strowberry puree to the cream so it's has this nice fruity and delicate sour taste. Your cake looks fantastic, thank u for this video!

@@sunshiicattara6410 yes it can be. But i think double would be more than enough as the base and the top needs to be rather thin. You can also bake it in a rectangular tin too. Hope you'll get loads of picks appearing on your bake 👍

@@sunshiicattara6410 The most popular cake mold used in Poland is 25 × 36, but there are also many other sizes, smaller and larger 😉. For the first time in my life I see that someone has baked this cake in a round and so small form 😳. Normally this cake has a rectangular shape (25x36) and is more folded, because the 'Carpathian' are the name of the mountains in Poland. Regardless of the shape and size, I recommend you bake this cake because it is very delicious 😋 (do not bake if you are on a diet, the filling has a lot of calories 🤷🏼‍♀️). Best wishes 😘

Joanna Kondziarz oh I love this cake. I baked it the first time in small cake pan. Then family was yelling for more (me too lol), so then I did recipe 4x bigger. It turned out beautifully, but only lasted two days. After that I realized that there is no pan in the world big enough for this wonderful cake, because it will disappear very quickly, no matter the size, it’s about time I made another one, and I sure don’t need the calories, your right it is very much loaded with calories lol.

Hello! Kisses from Poland :) If you want the dough to be perfect, you have to heat the flour a little bit longer, and bake it in rectangle shape, then cut it half - it would be better and more mountain shape (that's what karpatka mean - Karpaty mountains). Good luck and thanks for share our traditional cake :) Edit: we never use cornflour only a potato flour for cream :)

its corm starch is different than corn flour. And yes in Poland we use potato starch it is wery simillar to corn starch

Yes bake it in a rectangle cake pan shows more mountains shape. I am a Filipino and my husband is a Polish, and we live in Australia i can cook and bake few Polish food and i love Polish food.❤️👍

I made this last night! So very yummy, and the choux was especially delicious. I doubled the portions, because we only had bigger pans, and also added a smidge more sugar to the filling than in the recipe, because my family's got a sweet tooth. This was also served with dulce de leche on the side. 💛

This is my favorite cake of all time. I always make it for special occasions. Add a little bit of strawberry purée to the filling and it's going to be the next level delicious. That's my mom's little secret 😊

In Poland we have also "kremówka", very popular in Kraków and area. It only looks similar to this " karpatka" from this video, but the taste is different. Greetings from Poland 😘

Very good recreation of that recipe, but for the real ''Karpatka look'' you should use a rectangular form with dimensions of approx. 35 x 24 cm (then it will be more space for Karpatka waves). To create a nice waves on my cake I do stretch the dough in different directions with a fork and spoon dipped in ice water. Some recipes suggesting to soak the spoon/s in warm water. As for the cream, the yolks alone are enough.

Oh Helen. My dad was polish too and we used to have ‘ the polish van’ that came round once a month to sell traditional foods. I remember the sweets with the cow on the front !

In Poland, we most often use a 25x36 cm mold for this cake and make larger folds on the dough, because the name of the cake refers to the Carpathian Mountains in Poland.

Giant pate choux and a pastry cream then chilled. Its like a giant cream puff. Or a cream puff cake :) Yummmmm.

Hello Apron! I have tried numerous recipes of yours, and this one is next on my list!! Looks so delicious! And from what I read, yours looks to be a fairly authentic recipe (but I don't know as I am not Polish) authentic or not it looks so delicious and I can't wait to try it!! Love from FL

In Poland potato starch is more commonly used than corn starch. The rest is really authentic.

Omgoodness, yummy!!! I'm polish and I don't think I've ever had this. I never knew you can whip butter and add custard to it. Wow, I've made custard lots of times and this step would make it so much better. Thank you! Can't wait to try this.

Cześć ! Super, że pieczesz nasze polskie ciasto , jednak duszą tego ciasta jest to , że rośnie bardzo pofalowane ( jak nasze góry Karpaty - od nich pochodzi nazwa ) a więc bardzo pofalowane ,delikatne i chrupkie ( zauważyłam ,że Twoje ,szczególnie spód jest lekko gumowate ) zachęcam do spróbowania wersji chrupkiej , pieczonej na blaszce , chociaż to tylko propozycja , nie śmiem Ciebie pouczać . Sedno kremu uchwyciłeś idealnie , są dwie szkoły robienia tego kremu ,ta którą gotujesz jest idealna ,gdyż budyń łączy się po zrobieniu z masłem ( inna szkoła ,to gotowanie wszystkiego łącznie z masłem , moim zdaniem daje gorszą wersję kremu) . Jesteś moim ulubieńcem wśród kulinarnych kanałów do którego ciągle wracam ,podziwiam nagrania pełne spokoju ,skupienia i precyzji . Dla mnie większość przepisów ,to nowości ,które poznaje dzięki Tobie . Karpatka jest moim ulubionym ciastem obok sernika w każðej wersji.Trafiłam na Twój kanał parę miesięcy temu.Jest dla mnie sporą inspiracją. Dużo dobrej energii dla Ciebie ..namaste
