I always feed the chicken organs to my dog. He loves them. Food looks great! I'll have to try this recipe.

Never understood why kitchens across American removed the back bone. So much flavor is lost! Grew up eating Cuban food and drinking Cuban coffee in Hialeah Florida. Top shelf cooking is what happens in your kitchen for sure!

why has it never occurred to me to butterfly from the front and leave the backbone in? The bones are what gives the chicken flavour and juiciness and I have been cutting out the biggest bone on the bird! I am going to do it your way from now on bro! Amazing recipe as usual. Just came across your channel. Can't wait to watch more. Quick question. Could the same process be used for spatchcoking a turkey? Each year at Thanksgiving, I have been spatchcocking the turkey and cutting out the back bone. It is labor intensive to say the least.
