I was wondering if the color of the joint has something to do with which side gets moved, and which one is stationary, and whether or not we can change it.

The color is purely visual. Only the numbers displayed once you zoom in are important. If the split joint is on a red anchor the (1) is always stationary.

The split joint at the end of the video does work. You just forgot the split joint at the top anchor.

Your 95% correct. If you click the (i) in upper left you can see the event order. Some levels may have the hydraulics start before anything else happens. Technically hydraulics can happen after a time delay but you would only see that in the workshop levels and it's pretty rare to see a time delay.
