Recipe:
2 cups of mashed ripe mangos
2 cups of chopped pineapple
1/3 cup of jarred lemon juice
3/4 cup of Monk Fruit Sweetener
3 teaspoons of Calcium Water (come with Pomona Pectin)
2 1/2 teaspoons of Pomona's Pectin
Directions:
Add the mango, pineapple, lemon juice, and calcium water to a larger pot and bring to a hard boil that you can't stir down. Once it is at a rolling boil that you can't stir down add in your sweetener and pectin (it is important to mix your pectin with your sweetener before you begin so it will be easier to add to your jam mixture).
After you have added the sweetener and pectin let the mixture come back to a boil and let it boil for 2 minutes. Then remove it from the heat and ladle it into hot jars. Be sure to leave 1/4 headspace in each jar and wipe down the rims with vinegar to make sure you get a good seal. Place the lids on then the bands and tighten only fingertip tight. Put the jars into you water bath canner and make sure they are covered with water. Boil on a rapid hard boil for 10 minutes and then turn the heat off and let them sit in the water for another 5 minutes before you carefully remove them. Let the finished jars sit on the counter undisturbed for 12 hours. Then you can clean the jars up, label them, and put them away. This recipe will make about 4 half pints.

I finally had some success using Pomona….after ruining lots of beautiful peaches. I’ve had requests for low sugar jam for Christmas so I’ve ordered the book.

This sounds great. My question is it you don't have Monk fruit does it measure the same as another sweetener? I'm thinking of delving into alternative sweeteners and the Pomona cookbook too. Thank you!!!

So sugar alternatives will vary in potency depending on what the sweetener is made of. So it really depends on which one. True monk fruit or one that is mixed with another alternative might be a lot sweeter than say allulose. So you would need close to twice this much of Allulose. When you get a sweetener you want to try I suggest checking out Pomona, either their books or website and see if they have a jam or jelly using the type of sweetener you are wanting to try. That way you'll know exactly how much of it you'll need and your jam will set properly.
